No Peel Apple Cake (and Winner!)

I couldn’t believe it when my friend Jacquie told me I didn’t have to peel the apples when making this cake!

I love it when I can take a shortcut in the kitchen, and yesterday was my lucky day.

I made several cakes over the weekend – one to keep, and two to give away!

It’s easy and so moist – and it’s perfect for Fall, and just in time for apple season!

No Peel Apple Cake
4 c. chopped unpeeled apples, cut into ½” pieces
½ c. oil
½ c. applesauce (I used my apple butter!)
1 ½ c. sugar
2 eggs
2 c. flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda

Chop the apples & leave the peels on – WOO HOO!

Add all ingredients

Mix & pour into 9×13 greased pan

Sprinkle on top: ¼ c. sugar and ½ c. chopped pecans and bake at 350 for 50 minutes

This cake will melt in your mouth! Add a dab of freshly whipped cream on top, and you will think you died and went to heaven.

Thank you Jacquie – I think your cake is now a “staple” in the Coughlin household!

Do you like cooking with apples?

Over the weekend I canned “Apple Pie in a Jar” and pears. Stay tuned, and also for my 3-part post on my Fall luncheon!

(Thank you all for your comments and entries for the Fall Giveaway! The winner is … Jen, from a Good Cup of Coffee! Enjoy the apple butter, Jen!)

Yum…what a fun and easy recipe!

I use my apple\corer\peeler thingy, and I have to say, it makes life so much easier when I decide to make a recipe calling for apples! It cores and peels the whole apple by cranking- and my kids love watching it! :)

I just posted on visiting some pumpkin patches, including the Roloff farm (Little People Big World) so come over if you can.

Thanks again for a great giveaway, Sandy…I’ll try again next time!:)

    Blessings!

I have a question about the cooking time – I made this tonight and it seemed overdone at 55 minutes. Just wanted to make sure it wasn’t a typeo or something. Otherwise a wonderful recipe and I love your blog!

  27. Sandy says:

Sarai, I baked 3 cakes at the same time for 55 min – no problems. I’ve had other people say they’ve already made it and no one has said anything about the time. I always set the timer for 5 less anyway – is your middle gooey?

    ENJOY!

How do you do it. You posted this yesterday and boom, now there’s a cake sitting on the counter. Can’t wait to try it. We did have to put up a barrier so the pecans would not affect “my” half of the cake.
Can you post a dutch baby recipe on Friday?? And how about your famous carmel apple recipe?
    You’re awesome!

Thanks for the wonderful recipe. I do have 1 question though. I made this earlier with my 3 year old who loves to help in the kitchen. It seemed like the batter was too thick, but I’m pretty sure we did everything correct. What consistency should the batter be? It still tastes great, but I want to make sure I’m doing it correctly. Thanks!

    Yay, Jen — Congrats.

So, I have yet another question… when you say “Add all ingredients” did you put the apples into the mixer too???

I’ve been so busy these past two weeks with my Homemade with Love series, and a couple estimates at work, that I’m just now catching up and bombarding you with questions! Sorry!
