That’s how my mom made acorn squash too. Aside from pumpkin (as in pie) it was the only kind I’d voluntarily eat. Might be a good time to try it with my kiddos. Thanks for the reminder.

This looks fantastic. I usually cook the two halves filled with butter and brown sugar.. sometimes a little bit of bacon.. and we just scoop it out.. With this method do you eat the skin too? Can’t wait to try it.. we all love acorn squash.

I have to tell you…I am not a big squash lover but your acorn squash really looks delicious! I’m thinking I am going to try this at Thanksgiving. Thanks so much for showing how to do it step by step. I’m really looking forward to trying this.

I had my students make acorn squash this week as one of their vegetable labs. We did the butter and brown sugar, however we microwaved it because of class time. By the way, I emailed you – hope you got it!

THe girls and I are making apple butter today. Can't wait to see how it turns out.

That’s the way my mom always cooked acorn squash, too. I’m the only one who likes it in our house, but sometimes I’ll make it and eat the whole thing for lunch.

I have got to try that acorn squash recipe. I usually just stare at them blankly in the store and go “Huh” and walk on by but you’ve inspired me to pick one up and bring it home lol.
