Easy as 1,2,3 Casserole & Wild-Wool Giveaway!

If you grew up in my era, then you probably ate more than enough of this chicken and rice casserole!

Honestly, I think it was a staple in my home. My mom made it a lot – with either chicken or pork chops!

Thursday night I was in a rush. I had just finished work and was off to my daughter’s first basketball game of the season. I knew I had chicken breasts defrosted, but I had to think of something, and quick!

Immediately I thought, what would my mom have made, and this simple recipe came to mind.


Chicken Rice Casserole
Chicken breasts
1 cup brown rice
1 can your choice cream of … soup
1 packet Italian seasoning mix
2 cups boiling water
Salt & pepper, or your favorite seasonings

Always keep extra soup packets on hand


3 easy ingredients


Mix together with 2 cups of boiling water


Pour into a 9×13 pan, adding chicken breasts on top


Just like my mom – sprinkle paprika on top! It’s just what she did! It’s ready for baking!


Instructional “love” note
Running out the door, I left my son an instructional note. I’m a working mom, so my kids are getting more efficient with following my dinner directions!

Cover with foil and bake for 1 hour and 20 minutes. Put in oven at 350. And my notes are always signed – Love, Mom


Take foil off; bake another 15-20 minutes


It doesn’t have to be gourmet
A meal that I enjoyed 45 years ago is a family pleaser every time! I’m not sure I’d necessarily entertain with this dish, but if I were in a pinch for time, why not? After all, entertaining is not about impressing or gourmet dishes!
