Dreaming of Apple Butter …

We’re a few weeks out with our kitchen being completed, and I’m dreaming of our family favorite, Apple Butter.

APPLE BUTTER
8 cups applesauce
3 1/2 cups sugar
1 T. cinnamon
1/2 tsp. ginger
1 tsp. cloves
(I always double this recipe – it fits perfectly into my large pot)

I also make “pear butter” using this same recipe. But since its apple season, and our dear friends Roger and Faye provided us with another beautiful bountiful supply of Golden Delicious apples last week, I’m getting excited to pull my canning supplies out, and my Fruit & Vegetable Strainer

attachment for my Kitchen Aid mixer.

The process begins … and by the way, it’s an easy process if you have a stand-up Kitchen Aid mixer with this particular attachment.

There is NO peeling and NO coring!

Wash apples in the sink


Quarter and put into a heavy large pot with about 1 cup of water




Boil and stir until apples are soft 



Run softened apples through strainer

Beautiful applesauce – eat naturally with no sugar

Yucky skin, stems and seeds, ready to compost



Measure applesauce and other ingredients – stir and heat to boiling



Pour into sterilized jars



Always use brand new sterilized lids, and then ring



Process for 15 minutes in boiling water bath. Cool and ENJOY! We love Apple Butter on toast, waffles, pancaks, and muffins. The family favorite is “peanut-butter-and-jellies” or served warm over ice cream!

I've had an apple butter recipe (from the farm chicks) hanging up on my fridge for a week, and just bought the jars a few days ago. I've just been procrastinating because I've never canned before. Thanks for the encouragement and making it look so easy!

Yes – I made your apple butter and I'm going to be making some more this year! I grew up eating apple butter the Pennsylvania "Dutch way" – on top of cottage cheese!

We picked three bushels of apples the other day and I'm planning on making applesauce and your apple pie in a jar tomorrow.

Is it ok to compost seeds? I noticed you had seeds in your compost list. We compost but have always avoided seeds because we thought they might grow? Just curious! If you can throw seeds in too, it would be nice not to have to separate them out in the future.

The apple butter looks scrumptious. I have just in the last few years found time to start making some of my own jams and jellies again. I don't even like the store bought stuff at all.

This year I harvested a batch of white riesling wine grapes from some vines I planted two years ago. They made some delicious wine grape jam. The wine grape makes for a little tarter jam than a concord…yum!
Blessing on you through this kitchen remodel. It will give you years of pleasure when it is done :)

Yum!! This looks so delicious!! And I came here from the Apple Pie in a Jar post, which I'll also be trying today!! Do you know if I could skip the canning process and take it straight to the freezer instead of processing them?
