What to do with Green Tomatoes!

I’ve always felt bad at the end of tomato season, because there have been more green tomatoes than I knew what to do with. And I’ve actually thrown them out!

That’s until this year, when I got a simple system down making yummy salsa. In November! It was so easy!

Let the harvested green tomatoes sit in your garage or on your back porch. As you’re ready, bring in just enough tomatoes to ripen on your counter, to make a fresh batch of salsa.

Blanch the tomatoes (my recipe calls for 18 medium) in hot, boiling water for 3 minutes.

Fill the sink with cold water.

Take out of hot water; put into cold water. Remove the skins.

Blanched tomatoes

Cut up into small pieces, adding to a pot along with Mrs. Wage’s salsa mix and 1/2 cup white vinegar.

Boil, simmer, serve! (Or can what doesn’t get eaten!)

This past weekend we went out of town for soccer, so I brought my friend Steph a bag of green tomatoes and a packet of Mrs. Wage’s! Her tomatoes are ripening on her counter right now, so she’ll be enjoying the fruits of FRESH SALSA here any day!

    Sandy – with green tomatoes, especially here in the South, we like to bread them either in flour, cornmeal or a mixture and fry them in shallow oil. My Mom tops hers with parmesan cheese while they are still hot. We also have used fried green tomatoes in eggs benedict and they are yummy when used in place of eggplant for eggplant parmigiana!

  2. This is a great idea… I don’t have a garden myself, but I am blessed with friends who always share the “fruits of their labor” with me. Next, time I’ll be sure to take a bunch of green tomatoes! And I will be sure to past along the tip.

    I love my green tomatoes coated in cornmeal and pan fried. I know that is the traditional way of doing it but it’s just so good…how can you not :) My dad will sometimes take green tomatoes and include them in his hot sauce. Which honestly has more of a salsa texture than smooth sauce.
