Bad Mom = Cookie Brittle!

I was a grumpy mom this morning. I apologized to my kids before they left for school, and I even gave them all a kiss. They are so forgiving!

After feeling bad throughout the day, for being a part of helping them start their day off with a negative spin – I redeemed myself!

How did I redeem myself?

I made Cookie Brittle, an easy 5-ingredient recipe. I had it waiting for them when they walked through the door, after school.

Bad Mom = Cookie Brittle.

The kids eyes lit up when they saw what I had made!

Cookie Brittle
Mix together: 1 cup butter, 2 cups sugar, 1 tsp. vanilla, 2 cups flour. Add: 1 cup chocolate chips. Press into a 15×9 jelly roll pan (I used my Pampered Chef Bar Pan.)

Bake at 350 for 20 minutes, checking often so it doesn’t burn around the edges. It should be brown all over. Cool. Break into irregular pieces.

Food always helps when we get in a bind, doesn’t it?

I’m just a normal mom, not perfect by any means. And I bet you are, too!

I’m thankful for God’s grace, and I’m thankful that my kids understand it, too!

I don’t know that I make anything in particular for my family when I want to give them a treat.

My family loves No-bake cookies (or “cow-plops” as we call them :) They are quick and easy, and fit the comfort food category well.

yummy, these look great. Hmmm I suppose I make some type of cookie, but we don’t do sweets too often and when I do make them, the girls usually want to help. Actually more often than making cookies, I’ll sometimes pick up a favorite food item when I go grocery shopping. Something that I normally wouldn’t buy. They love that.

Hi Sandy, we all have our moments and it has happened to me as well. I always feel bad snapping off at the kids and it usually isn’t their fault its just a bad day or morning for mom. I think the cookie brittle is a great way to redeem yourself. !!!! Sometimes we feel just saying sorry isnt enough so cookies always help to take it over the top. If I feel bad I usually bake cookies or a cake works everytime.

What a great treat! Never heard of cookie brittle before but it looks delish. :) We all have grumpy times as moms, what a great little “I love you” treat for kids! As a special treat around here, it’s a swing by Dunkin’ Donuts. They LOVE that! Or a “silly face” sandwich, where you have an open faced PB sandwich and use fruit or pretzels or raisins or sprinkles (for freckles!) to make a silly face for lunch! They get such a kick out of it!

LOL! this sounds like the classic PMS to me! Everyone knows at my house…I make choc chip oatmeal cookies every time! This is my PMS staple that goes right along with the apologizing! But I have to say I have made those ‘no bake’ cookies too, but never heard of them called ‘cow plops’ (Charitys comment above) hmmm.can I still eat them now? ha!

Funny you should ask. Just this morning I could tell my little guy needed something special. So I whipped together a baked oatmeal. Boy did it lift his spirits. I sometimes wonder why I don’t do nicer things for my kids. They are pretty straight forward in the food department, it just has to taste good. They don’t care if it’s easy or not.
I may just be making these cookies. Looks yum!

Yum. I just made some of this (added a little brown sugar and milk to make it stick together) and now I’m eating the dough. There are no raw eggs to worry about (not that that usually stops me) and it’s yum-o! It was never meant for the oven! :)

I have many mornings like this – my son has no concept of time…even with timers set for particular tasks, and it really throws off the schedule. For a really good treat, I make homemade ice cream!

Oh yummy!!! Those look sooooo good!!

My husband just left for two weeks away with the Army and our little guys are missing him like mad. He goes away frequently for short time periods and I like to make them things they can use for creative play so they can expand their imagination – and forget for a bit that their daddy is gone. Yesterday I made them Indian Warrior headbands out of leather scraps (I blogged about it with instructions, it was surprisingly easy and inexpensive!)

As for food we make stove top popcorn as a “special treat.”
