
Last week I pulled fresh chives from the garden to add to our mashed potatoes.

Did you know that chives are probably the easiest herbs to grow in the garden?
They can be added to just about any meal you would normally add onions to, and they’re very good for you! They are the smallest of the onion family and there are a few types to choose from. They’re perfect to use if you ever run out of garlic.
You can eat every part of the chive plant. The edible flowers add color to the salad bowl or other garnish, the grass-like leaves can be cut up and used, and the bulb can be used as a mild onion.
Discard the flower stalks, and crumble the flower heads into your salad.

Back to my potatoes. Boil them until soft. I don’t worry if there are a few eyes left in them. Who’s looking for perfection? It’s all about the flavor, right?

Add sour cream and butter. A little bit of cream or milk.

Your choice of seasoning.

Oh I love chives and I don’t use them nearly enough. I need to grow them so they are readily available.
Sometimes I’ll add roasted garlic to my potatoes. That totally kicks it up!

Yummy yum yum. I do love mashed potatoes. These sound divine.
For plain old mashed potatoes, I like just butter, milk, salt, and pepper. But for smashed red potatoes, I like chives and horseradish. Heavenly.

Oh, and we love to add bacon, green onions, and some cheddar cheese to our potatoes if there is no gravy. The hubby does not like mashed potatoes without gravy!

I put a Knorr Chicken bouillon cube in the water with potatoes and then roast some garlic cloves to mash in with the potatoes at the end.

Wholegrain mustard – it’s just not the same without. I also heard about someone adding wasabe which they swore by to give it a tasty kick.
I haven’t had chives for years we had them in our garden growning up and I loved them, especially in potato salad. As soon as I get a garden I’m going to plan some of these in my herb garden. Thanks for the reminder, these potatoes look great!

At our house, we call them Rumbledethumps! It’s our FAVorite holiday potato dish – mashed with chives, cabbage, cream, butter and all that good stuff, then baked, topped with grated swiss AND a really, good, sharp white cheddar.

Hah! I got confused and added my secret ingredient to the Bush’s Beans post. I vary ingredients for mashed potatoes but my Secret Weapon is a good oldfashioned potato masher. One where the metal part goes back and forth sort of like the letters MM and not the kind that is a flat circle with holes in it. If your masher has an old wooden handle with most of the paint missing the potatoes will taste even better (grin).

My mother always grew chives in her garden; I love them. Too cold where I live to have fresh chives from mine right now. I did see them in the plant section at Wal-Mart yesterday and thought I would like to plant some. Your potatoes look yummy! Joni

Love love Love CHIVES! Thanks for the recipe on how you do mashed potatoes. Since I had to go gluten free two years ago, I eat so much more potatoes then I used to. My mashed potatoes were getting a little boring, yours looks so much better!!!

mmmm sounds yummy! We love chives and the hint of onion they give foods.
I cook whole garlic cloves with the potatoes, drain them together and then mash it all up with butter, milk and sometimes a bit of sour cream. just right for garlic lovers like us
