Frozen Berries: Delicious Jam!

Remember last fall when I froze gallon-sized bags of raspberries?

Well, last week it was time.

Time to pull the bags of frozen berries from the freezer and to make jam.

Abby, my daughter, helped me make 3 batches.

Pureed the berries.

Added the sugar, lemon juice, pectin – and boiled and stirred and filled the sterilized jars.

Then using my easy green method, we filled and flipped the jars over (using the boiled, hot jam) until sealed.

It’s just so fun to make jam in winter. This year I used a lot of 1/2 pint jars because I tend to give a lot away!

In fact, sometimes my family complains that I give away more than we keep.

Oops!

Do you make jam in the winter? What’s your favorite kind?

(You can read about making jam the “green way,” here, and also my disclaimer about this method! Read The Art of Freezing Berries, here. This post today is being linked to Kimba’s DIY Day! Oh my! Now I have something else to try! I read both the posts on freezing berries and canning…it makes a lot of sense to me to freeze them so that they don’t stick together…iced berries whenever you need them…YUM!!!
I have no experience with this at all…my favorite jelly is muscadine…I buy from the Birmingham, AL Pepper Place farmer’s market in the summertime :)

Hi Patti, if you’ve never canned make sure and look up the process online. There are excellent sites out there – it’s really rewarding and the family will LOVE YOU even more! :)

My favorite jam is rhubarb strawberry. My mom always made it growing up and I finally learned to make it. I am hoping my favorite produce lady at the central market can get some rhubarb for me so I can make it, otherwise it’ll be 2 LONG years to wait for another jar! Wal Mart’s jello is gluten-free, so my husband can also enjoy it!

  5. This looks great – I have bags of strawberries that I haven’t used, yet, either! Maybe this is a stupid question, but the berries are thawed right? If so, do you keep the juice or not?

    Sandy Reply:

Hi Jessica, yes, you thaw the berries first!

Then I do drain a tiny bit of the juice from the berries before using, but not all :)

Yum! I have not made jam in winter…I too have gotten complaints about giving too much jam away. My family only likes homemade jam.

I make freezer jam and have never made cooked jam. I might have to try it sometime.

THANK YOU for this! I’ve made jam before, but it’s been a long time. . . and I’d forgotten how to do it! I’m going to use your method and make some of this. My husband is a real lover of raspberry jam; he’ll be so proud of me!

I have never made jam at home. Would absolutely love to especially during strawberry season (right now for us!). I’m know to pick 12lbs at a time, and not know what to do with them…haha.
I’m intimidated by the boiling the jars phase…

    Hi Sandy:

I have been using the flip the jar method (green) of canning for about 18 years and have never had a problem. I am envious that you have soooo many frozen raspberries waiting to be made into jam. We just finished our last homemade jar of raspberry jam last month…my son will devour it if a can is open! My favorites to make are raspberry and apricot. Joni

I love making jams and jellies! I try to make strawberry freezer jam every year during strawberry season. I’ve also made red raspberry and black raspberry jellies (I tried doing a freezer jam last year but it didn’t solidify…it’s more like raspberry sauce). My family absolutely LOVES the apple pie jam I’ve been making every fall. There’s nothing quite like having a supply of homemade jams is there?

I’m not known for my expertise in the kitchen, but I have to say how proud I was after making blackberry jam. We had a huge blackberry bush and I just couldn’t stand to see them go to waste.
They were just too tart to eat right off the bush.

It was suggested that I make jam out of them. Wow was I glad I did! Easy, fun, and I felt so happy giving them as gifts. I can’t wait for the next crop of berries.
