The Chef’s Toque: Tall or Short?


I learned a LOT from Chef Andy on my Bush’s Beans trip to Napa. But one thing I thought would be fun to share with you was the trivia about the chef’s hat (or a “toque”).

How many creases are there and what do they mean? Do you know?

The hat dates back to the 16th century and the different heights of hats indicate rank within a kitchen. The symbolism of the 100 folds of the toque are said to represent the many different ways a chef knows to cook an egg.

So I’m assuming the taller the hat, the more pristine or highly ranked you are in the kitchen.

With that in mind, who would wear the highest hat in your family?

I’d probably have the tallest hat in my family, since I cook the most. But my husband is an outstanding cook, I must say!

  1. My husband would have a one giant fold, cause he can scramble a mean egg. LOL! But other than that I rule the kitchen.

    I’m a bit of a control freak in there because I love good food and I’m afraid if someone else gets in there it won’t be so good. LOL!
    I mean seriously, life is short, eat well! LOL! Maybe that’s my new motto.

    I would probably wear the tallest toque in our family, but I love that my husband or children are always ready to lend a helping hand. The youngest says he will be a chef when he grows up, that or a toy maker!

    As far as cooking/baking I would wear the hat in the family.
    If there was a spiritual leader hat it would belong to my husband!
    A laughter hat would belong to our kids and a pure joy hat would belong to our granddaughter!

  7. I’m the same as you. I would wear the tallest b/c I do most of the cooking but my husband can cook. He wears the tallest toque when it comes to BBQ!

    So the chef’s toque is akin to the physician’s white coat. . . the longer the coat, the more senior the physician.

    If toque tallness were based on experience, I’d have the tallest one around here, no doubt. If it were based on sheer talent, though, I’m afraid my husband’s would be much taller than mine. Since he’s almost 6’7″, that might be a bit of a problem. So maybe I’d better just take the tall hat for myself. :)
