I recently found my little book that went missing: The Blessings of Love by Mother Teresa. It’s a book full of inspiration from this wonderful woman whom I adored. She brings insight and clarity and perspective in this book, for when we get mixed up with wrong motives and off track with things that do not matter. I know it’s the week before Thanksgiving and many of us feel stressed. Come back tomorrow and I will share about a Stress-Free Thanksgiving and a schedule to keep us on track for Week 3!
Today I want to talk about my friend, Faye. She’s an older friend in my life whom I’ve known for 41 years. I love her attitude about life, and her perspective about giving and loving, as she has taught me a lot about these things. But what I really love is her recipes!
Do you remember 2 weeks ago when I shared my Easy-Press Pie Crust? Well today I’m going to share the promised Faye’s Pecan Pie recipe that goes perfectly into that pie crust! For me, it’s a MUST for my Thanksgiving menu this year. And it’s so easy!

Preparing the pie crust from this recipe, you will make Faye’s recipe in an already cooked pie crust. (And I’m telling you, it’s much better than buying store-bought. You will WOW your guests for sure.)

Faye’s Pecan Pie
(This recipe is from Faye’s wedding 1956 Betty Crocker cookbook.)Filling is for a 9″ pie. You can double the recipe for a 9×13 pan, which is a size I love for a larger crowd. Heat oven to 350 degrees.
Beat together all ingredients except pecans.
3 eggs.
2/3 cup sugar
1/2 tsp. salt
1/3 cup butter, melted
1 cup dark corn syrup
1 cup pecan halvesAdd in the pecans and mix by hand. Pour into pastry-lined pie pan. Bake until set at 375 degrees for 40 to 50 minutes, or until set.

I’m traveling north this week (I live in NC) and will celebrate Thanksgiving there. This pie looks wonderful!
I have to say, that what you served up best for me today, Sandy, was sharing Mother Teresa’s wonderful quote. This will be trip #2 of 3 within three months, and I am feeling a little tense thinking about all that needs to be done.

Mercy, it’s looking like we’re going to have a small army here! And I’m farming out the pies if I have to cook the turkey in my easy-bake oven! I have a really yummy peach and pecan pie recipe, though, that I’d love to make soon- pecans are hard to come by here and expensive through the commissary.

As a novice pie maker, I have a couple of questions. To do the 9×13 size, where you double the pecan filling, do you also double the recipe for the crust? When you poke holes in the crust, they don’t go all the way through, do they? Thanks.

I made this pie following the directions for the 9×13. We all thought the pie tasted salty, and the pie stuck to the bottom of the pan.
