When our lovely neighbors came for dinner last week, and we ate a late meal under the stars, little did I know we’d be indulging in such a beautiful salad. Because I delegated this portion of the meal, it was a surprise to all of us.
The salad my neighbor served was so fresh and colorful, and the dressing was so light, all of the guests oohed and ahhed. I have to admit, I was a little concerned that the main entree wouldn’t measure up to our salad course! But it all worked out, and our night together was not only long-past due, but really enjoyable.
Here’s a little thanks to my neighbor, Ellie, for bringing this beautiful salad.

Recipe: Ellie’s Prawns and Avocado Salad with Mango {ReluctantEntertainer.com}
Summary: This stunning starter salad is a colorful mixture of ingredients, perfect for a summer evening dinner party.
Ingredients
- 1 lb. Prawns (16-20/pound)
- 3 Mangoes
- 3 Avocados
- A squeeze of lemon juice
- 1/2 cup white wine
- 1/4 cup extra virgin olive oil, plus 1 T.
- 1 T. red wine vinegar
- Salt and pepper
- Mixed salad greens
- Cilantro, chopped, to garnish
Instructions
- Shell & devein the shrimp; sauté in olive oil for 1 minute on each side. Add ½ cup white wine and simmer until cooked (approximately 2 minutes). Drain and refrigerate prawns until cool.
- DRESSING: Mix lemon juice, olive oil, vinegar, salt & pepper. Reserve 1 tablespoon and divide the remainder in half.
- Toss salad greens with one-half of the dressing and layer onto serving platter.
- Cut mangoes and avocados into cubes and toss with one-half of the dressing and lightly layer on top of greens.
- Toss cooled prawns with reserved tablespoon of dressing and arrange on top of mango/avocado layer.
- Sprinkle cilantro over all.
- ENJOY!

OHHHH!!!! LOVE this feature! I’ve always wanted to have this option on my blog (yes, I use it on others), but never knew it was a WP plug-in. Off to look for it! I don’t really have a preference for where you put the “print this” – as long as it’s right near the actual recipe, we’ll find it

Tonight is Family Dinner Night in our household, when our twenty-something (age, not number!) children commit to being home for a family meal just like when they were all younger. We are a farm family, growing avocados in So. California. This salad will definitely be a hit … thank you for the delicious recipe!

I do print out recipes that I find on blogs. My wife does not read blogs but loves new recipes, so when I find one that I think we would enjoy I print it and take it home. We have had some wonderful meals from those print outs!!!

Yum yum yum! I love mangos, avocados and shrimp so it is basically a dream come true! I have a smart phone so I make sure I have the recipe open in a browser and then just use my phone at store and while cooking. I still think print recipe is a great option though!

i love the print option but unfortunately, it did not work for me. it sent out a blank page. i often print from blogs and have not encountered this problem before so i am not sure what caused it. i think it is a great addition, though and hopefully i can figure out why it doesn’t work for me on this IMAC computer.
