I should warn you, these will be hard to keep around! Everyone will want to eat them, especially when they’re on a stick! Food on a stick is just so much more fun to eat. That’s OK because this recipe is easy to double in case you need to make enough to feed a crowd.

If you have a big gathering for easter, this is a great activity for the kids. You can have the eggs formed and ready to decorate when your guests arrive. Set up a decorating station, and let everyone make edible Easter eggs!

  • There’s no right or wrong way to do things! Decorate them however you like!

Gather these ingredients

  • Rice Krispies cereal – You’ll need 6 cups. That’s most of a big box.
  • Mini marshmallows – 1 10-ounce bag.
  • Vanilla extract – Pure or artificial is fine.
  • Butter – Unsalted.
  • White chocolate candy melts
  • Pastel food color
  • Coconut oil 
  • Sprinkles – All your favorite Easter colors and shapes!

You’ll also need

  • Egg-shaped cookie cutter
  • Parchment paper
  • Lollipop sticks – Or ice cream sticks; about 2 dozen.

How to make Rice Krispie Easter Eggs

  • Melt the butter over low heat in a large saucepan. 
  • Add the marshmallows and vanilla and stir with a large spoon until melted and combined. Remove from the heat.
  • Add the Rice Krispies to the butter-marshmallow mixture and mix well to combine.
  • Butter the cookie cutter and your fingers, then place the cookie cutter on a square of parchment and fill it with an even layer of Rice Krispie treats.
  • Gently remove the cookie cutter, leaving behind the egg-shaped treats. 
  • Slide one of the sticks into the bottom and set it aside on a parchment paper-lined baking sheet.
  • Repeat until they’re all done and set them into the fridge for a quick-set, or leave them on the counter for a few hours to set up.
  • Before decorating, melt the white chocolate using a double boiler or microwave – see the instructions on the package.
  • Stir in 2 tablespoons of coconut oil and mix until smooth. Divide the chocolate between small bowls and add a few drops of food color – 1 color per bowl – and mix.
  • Lightly frost the eggs with the chocolate, then press the sprinkles on top. Set aside to harden completely.
  • Enjoy!

Tips & substitutions

  • Try to work quickly, forming the eggs as quickly as possible so that the mixture doesn’t start to harden. If it does, you can warm it up in the microwave in 10-15 second bursts until it is barely warm enough to be workable.
  • You can use candy melts, too, instead of white chocolate, to frost the eggs.
  • No coconut oil? You can also use melted shortening.
  • Buttered fingers will keep the mixture from sticking to your fingers as you work with it.
  • For cute gift-giving, wrap each egg in a small plastic bag and tie it with a ribbon.

Ingredients
 

  • 6 cups Rice Krispies cereal
  • 10 oz mini marshmallows
  • 1 tsp. vanilla
  • ¼ cup butter, ½ stick
  • 1 bag White Chocolate Candy Melts
  • Soft colors food coloring, pink, yellow, blue, green
  • 2 tablespoons shortening or coconut oil
  • Assortment of sprinkles
  • Parchment paper + Round or egg-shaped cookie cutter
  • 24 lollipop sticks or wooden ice cream sticks

Instructions
 

  • In large saucepan, melt butter over low heat. Add marshmallows and vanilla and stir until completely melted. Remove from heat.
  • Add Rice Krispies cereal; stir.
  • Butter the cookie cutters and your fingers; fill the cookie cutter with a small amount of rice crispies, presings firmly and gently remove. Set the newly shaped treats onto a large piece of parchment paper, placing the sticks into the bottom of each one.
  • Meanwhile, melt the white chocolate using double boiler or microwave method (refer to packaging).
  • Stir in 2 tablespoons shortening or oil until smooth. Separate out into small bowls and add a few drops of food coloring and stir until desired color is achieved.
  • Lightly frost the Rice Krispies Treats, setting on parchment paper. Press sprinkles on top of each treat.
  • Let set to harden, or transfer paper to fridge for quick set.
