Allow this dish to grace your table this spring–it’s indulgent, yet fresh and simple, with so much flavor!

Ingredients for Spinach Salad with Warm Bacon Dressing

Spinach is delicious in the spring, and tossed in a warm bacon dressing? Even better!

All you need are these ingredients:

  • Baby spinach
  • Boiled eggs
  • Bacon (with grease)
  • Red onion
  • Pine nuts
  • Marie’s Thousand Island Dressing

What a joy it is to set out a salad like this! I love the saying, we eat with our eyes! This salad is beautiful!

We used real bacon, and hard cooked eggs, and a spin on Marie’s Thousand Island Dressing to take it up a notch.

Spring is the perfect time for salads, so I hope you love this salad today!

Think of versatility, and serving it in a parfait dish, on a large platter (like we did), or in a wide salad bowl, where you can see the beauty!

Adding a tiny bit of bacon grease to the dressing is a little bit indulgent, and so good!

What mixes well with spinach?

Try making a spinach salad, adding cucumbers, tomatoes, strawberries, sesame seeds, a little goat cheese and Marie’s Chunky Blue Cheese Dressing with bacon. Also so good!

How do you make warm bacon dressing:

  1. Cook the bacon; remove to a paper towel-lined plate. Roughly chop the bacon on a cutting board and set aside.
  2. Cook the pine nuts in the rendered fat; transfer to a paper bowl-lined plate and set aside.
  3. Drain off most bacon grease from the pan. Add the Marie’s Thousand Island Dressing and stir to incorporate.
  4. Expect the color to darken to a deeper orange!

I don’t know about you, but just like my mom used to make, I save a jar of bacon grease for little indulgences like this dressing.

Spinach Salad with Warm Bacon Dressing

Ingredients
 

  • 8 cup baby spinach
  • 3 hard boiled eggs, sliced
  • 4 strips thick cut bacon
  • ¼ small red onion, julienned
  • cup raw pine nuts
  • ½ cup Marie’s Thousand Island Dressing

Instructions
 

  • In a large bowl, add spinach leaves and set aside.
  • In a medium-sized skillet, lay bacon strips in a single layer. Bring heat to medium and cook bacon until 3/4 of the way cooked, then flip and continue cooking until done—20-25 minutes. If the bacon begins to brown too much before its fully rendered its fat, lower the heat.
  • Remove pan from the heat and transfer the bacon to a paper towel-lined plate. Roughly chop the bacon on a cutting board and set aside.
  • Heat the pan with the rendered fat on low and add the pine nuts. Cook until lightly golden, then using a slotted spoon, transfer to a paper bowl-lined plate. Set aside.
  • Drain off all but 1 Tbsp of bacon grease from the pan. Add the salad dressing and stir to incorporate, then add 2 Tbsp of water and stir until the dressing is hot and well combined with the bacon grease—expect the color will darken to a deeper orange.
  • Reserve about 3 Tbsp of the dressing, then pour the rest onto the spinach leaves and toss with salad tongs. Transfer greens to a serving bowl or large platter. Top the greens with the red onion, eggs, and bacon. Drizzle on the remaining dressing, then top with pine nuts and serve right away.
