Nacho Cheese Recipe with Sausage and Sauerkraut

Last week I was a lucky girl to enjoy a few days in downtown Portland with our friends who live there, and to create a Nacho Cheese Recipe with Sauerkraut and Sausage, inspired by the sauerkraut-tasting at the Olykraut booth at the Farmer’s Market.

We started off early, worked out down on the water front, then made our way up through the Farmer’s Market. Or, I should say, we ate our way through the market. :)

The produce was gorgeous, as always, the flowers smelled SO good (lavender!) and we ended up at our favorite little booth of the day, the sauerkraut booth, where we indulged in each flavor, excited to get home to whip up a new recipe. It’s fun to try something new!

And then, of course, a firm avocado on top – PERFECTO!

Nacho Cheese Recipe with Sausage and Sauerkraut

Recipe: Nachos with Cheese Recipe with Sauerkraut and Sausage {ReluctantEntertainer.com}

Ingredients

  • 4 sausage, grilled and sliced
  • Tortilla chips, about 6-8 cups
  • Mixed cheese, about 3-4 cups
  • 2 cups sauerkraut, drained
  • Oregano and thyme, finely chopped

Instructions

  1. Get a microwave safe plate and cover it with a layer of the tortilla chips.
  2. Put a layer of cheese over the chips. Microwave for 1 minute. Repeat this step.
  3. Layer again, this time adding 2 cups of drained sauerkraut and more cheese. Microwave again.
  4. Add a light layer of cheese over the chips and kraut and microwave for a minute more, or until you see the cheese bubbling.
  5. Sprinkle with fresh chopped herbs.
  6. Top with fresh sliced avocado.
