Taste of Spain Wedge Salad

Recently DOLE® Salads hosted Taste of Spain House Parties around the country. I’m a little late getting myself to the party, with my own recent birthday celebrations the past few months (it’s been awesome turning 50!), but I did create a Taste of Spain Wedge Salad recipe that is delish!

Last weekend my girlfriends and I gathered at their 2 cabins at Rocky Point Resort (southern Oregon), where we indulged in much needed relaxation, and enjoyed the sun.

Everyone came dressed in their finest. A couple in their Spanish reds and oranges.

Fast-forward 50 years. We were dressed in our finest lake apparel. (Which, by the way, I love the vintage pictures (above) that are on the Mid Century Fashion Facebook page. Very, very fun to check out!)

Back to the food.

My spin on the DOLE® Salads Spanish Wedge had easy ingredients such as olives, fresh garden cucumbers and heirloom tomatoes, feta cheese, red onion, and yummy blue cheese dressing.

Spanish cuisine is all about being creative and experimenting with flavors, colors and ingredients — and the vibrant, passionate culture is the perfect inspiration for a fiesta!

Since I was the “salad girl” one night, I thought back to my recent trip to the Dole Iceburg Lettuce fields in Carmel, CA, and how the “wedge” salad is very fun for a party, and has a great presentation.
