Last week I made for dinner a delicous version of a fried rice recipe, Pineapple Baby Shrimp Farro Fried Rice, with the much loved grain: farro.

We love the nutty, chewy texture of farro, and created a much healthier version of this recipe. This time I added fresh pineapple and fresh baby shrimp, a little bit of cheese, and all kinds of other fresh ingredients, like carrots, red cabbage, onion, and peas. The perfect springtime meal!

Oh, and scrambled eggs! Fried Rice was a staple in my home growing up, and mom made a killer recipe.

Trust me, this version with bay shrimp (or baby shrimp) and pineapple, we could eat 3 meals a day, it was that good.

I’ve also been cooking with Trader Joe’s reduced sodium soy sauce lately, which has 60% less sodium than regular soy sauce.

What’s farro?

Farro is a whole grain that’s high in protein and really good for you. I introduced my readers to it well over a year ago now, when I made a Blackberry Farro Rice Pudding.

The bottom line? Farro is sort of the “new kid on the block” and it tastes delicous! Plus, it’s heathy!

How I cook farro.

My favorite way to cook it quickly? Cook in the rice cooker just as you would quinoa or brown rice (I use the brown rice setting).

Despite its name, I don’t really “fry” fried rice, which makes it a really healthy dish with lots of vegetables, and just a tiny bit of oil.

Pineapple Baby Shrimp Farro Fried Rice

This pineapple and baby shrimp farro “fried rice” recipe is a healthy alternative to fried (white) rice, with a nutty, chewy flavor with fresh ingredients.

Ingredients
 

  • 4 cups cooked farro
  • 3 teaspoons olive oil
  • ½ medium onion, chopped
  • 1/2 cup red cabbage, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1 cup cooked peas, cooked and drained
  • 1 cup fontina cheese
  • 3 eggs, scrambled
  • 2 cups baby shrimp, washed and drained
  • 1 cup chopped pineapple
  • 6 tablespoons soy sauce
  • 2 green onions, sliced thin

Instructions
 

  • Heat a large non-stick skillet over a high heat. Add 2 tablespoons of oil. When oil is hot, add, onion, cabbage, and carrots, and stir-fry for 1-2 minutes (make sure to toss frequently so the veggies don’t burn).
  • Make sure peas, shrimp, and pineapple are all drained. Grate cheese and set aside. Scramble eggs in a separate pan.
  • Add 1 more tablespoon of oil, add (already cooked) farro, cook two more minutes, stirring frequently. Salt and pepper to taste. Drizzle soy sauce on top; mix well.
  • Add in the peas, cheese, scrambled eggs, pineapple, and shrimp. Lightly toss together.
  • Sprinkle with sliced green onion; serve.
