This Canadian Bacon and Pineapple Kabobs recipe is perfect to serve any season–for breakfast or brunch–a real crowd pleaser! This recipe was inspired by my friend, Amy, at She Wears Many Hats.

Our friends hosted a graduation brunch with us to celebrate our childrens’ college graduations a few weekends ago.

We called it, Friends Since Birth, because Elliot and Emily met each other at 3 months old – way back when.

I got a little weepy, as so many people gathered in our backyard to help celebrate these two young people’s accomplishments.

I thought about the genuine relationships and years of authentic friendships, ones that we parents worked so hard to foster and prioritize over the years, and how these 2 kids benefited from that.

Lifelong relationships.

Quite honestly, it doesn’t just happen.

Lifelong relationships take discipline, and work, but are such a huge blessing.

Teach our kids.

Despite what our culture says that it’s okay to be overly busy, to not reciprocate kindness and hospitality, to invite people in, to get to know our neighbors (yes, our neighbors were here!), I would have to disagree. We really do need each other and there is a whole generation who is missing out! We need to keep teaching out kids what it’s all about!

A community.

The 80 people in our backyard who came to celebrate Emily and Elliot were people who were family and friends, who cared deeply about our kids, and quite honestly, a community of people who our kids can call upon if they ever have a need.

We need one another. We need to celebrate and feast on life with one another. It’s the way God designed us to be!

Speaking of feasting, our friends Minor and Jeannie made the most delicious Canadian Bacon Pineapple Kabobs. (Recipe below.)

I can’t tell you how many people came up to me to tell me how “wow-licious” they were!

We served a giant platter of kabobs, a huge fruit salad, a yogurt bar, a variety of breakfast casseroles, and we bought mini cinnamon rolls.

For drinks, we had coffee, water, and juice. Nice and easy!

Speaking for the four parents who hosted the party, we were blessed beyond words by the support and genuine blessings that were poured out onto our kids in our backyard.

It’s amazing what food, people, and love can do!

Canadian Bacon and Pineapple Kabobs

Prep Time: 2 hours 20 minutes

Cook Time: 10 minutes

Total Time: 2 hours 30 minutes

Double the marinade recipe for a larger batch. To triple the amount of servings (for smaller portions), after grilling, take wire clippers and cut the kabobs into thirds.

Ingredients:

  • Canadian Bacon slices
  • Fresh pineapple, cut into chunks
  • Skewers
  • 1/4 cup pineapple juice
  • 2 Tbsp. brown sugar
  • 1/2 tsp. ginger

Directions:

  1. Mix the juice, soy sauce, brown sugar, and ginger; set aside.
  2. Cut the pineapple into large chunks.
  3. Folding the Canadian bacon slices into quarters, skewer each piece, alternating the meat and then a chunk of pineapple. Keep repeating until the skewer is full.
  4. Lay the skewers in a 9x13 pan and drizzle with the sauce.
  5. Marinate for 2 hours.
  6. Baste on the grill, using the marinade from the pan.
  7. Grill until heated through. Serve.

    Wow!! yummy looking ….or what?

    I love that bouquet of daisy and dill… so pretty. Everything was beautiful.

    Talking about kids and hospitality… (neat story, by the way! with these two, your son and friend!)

    Because we’ve attempted (our best!) to keep hospitality alive in our home… almost every single morning upon waking up.. my near three year old will ask me …. if… ” a friend coming over today?”

    Is that a good thing or a not-so-good thing… ? lol!

    Fun! I’m still close friends with 3 women, friends from before Kindergarten, 35+ years ago now. We regularly get together and our kids are good friends too!

    I met my best friend in college in the late 70’s. We both married summer of 1982.They moved to St. Louis for a few years..we stayed in Minnesota. Those first few years, we got together when they were home over the Holidays for New Year’s ..first year 1982…they moved back and now live an hour and a half away from us….we haven’t missed a new years Holiday since that first year. 5 kids between us, work schedules,our own family events, athletic events, college athletics, etc…one way or another we made it work :)

    What a nice celebration!

    In the recipe, soy sauce is mentioned, but not listed in the ingredients. How much soy sauce for the kabobs? They look yummy!
