Corn Chorizo Dip

Dips are my favorite and the best appetizers for a party in my opinion. They’re easy to whip up, full of flavor and people can happily gather around them to converse. Of course, serve with a sturdy chip (that will not break when you scoop the dip). [We recently updated this post from August 2014!]

Let’s get started, all you need are these ingredients:

  • Corn
  • Sour cream or Greek yogurt
  • Shredded Mexican blend, divided
  • High quality blue cheese
  • Chorizo
  • Jalapeños
  • Fresh cilantro
  • favorite corn chips

Cheesy Corn Chorizo Dip

Even if somebody slips in a little “double dipping,” you can let it slide, because we all love dipping this corn and chorizo goodness.

Tips and substitutions:

This hot, baked dip is full of tasty ingredients and fresh corn. I like to buy the corn at Costco (unless it’s truly summer and you can stop off at a Farmer’s Market stand).

Swap out the cheese–use cream cheese, Pepper Jack cheese (for a kick), or even goat cheese.

Save time by this shortcut of using frozen corn. 

Use a sturdy chip (one that will not break under pressure), as you dip the thick cheese!

How to make this easy chorizo corn dip

  1. Husk the corn and either grill or boil. Cut off the cob.
  2. Cook the chorizo and press into small pieces, and drain.
  3. In a small sauce pan, combine sour cream, 1 cup shredded cheese, and blue cheese. Cook on low heat, stirring until cheese is melted, then remove from heat.
  4. Mix in the corn and chopped jalapeños, stirring into the cheese mixture.
  5. Place the cheese mixture in an oven safe dish. Add the meat on top, and then sprinkle with 1 cup of cheese.
  6. Heat broiler to HI. When ready to serve, broil until bubbly – about 3 minutes.
  7. Sprinkle with chopped cilantro. Serve with your favorite chips!

Ingredients
 

  • 2 ears of corn, about 1 cup (or use frozen)
  • ½ cup sour cream, or Greek yogurt
