I have never understood that saying, “Time flies by as you get older,” but now I do. In fact, it was at this dinner party where my girlfriends gathered in my home, where all eight of us were moms of 8 high school seniors, all our babies—which means we’re all headed toward empty-nesting. We often talk about how quickly time is running by, how did this happen, how did we get here? Less time seems to be a huge reality right now, although we’ve all been given the exact amount of time in the day, and that never changes.

Enjoy each moment.

As time looks and feels different than it did years ago, I want to think that we’re handling it more “maturely” now, or that we’ve simplified, slowed down, and learned to enjoy each moment of the day.

That is a daily goal of mine, not that there aren’t spurts of busyness.

Find good hiking friends.

To fight the winter doldrums, my husband and I have been trying to enjoy more of nature together each week, whether soaking up some sunshine, working in the yard, going on a walk or a hike. Getting into the great outdoors feels just right—a place where we both long to be.

Oregon is filled with beauty, and this past week we hiked with our hiking buddies to the top, above the Jacksonville Reservoir. Neither my husband or I have been there. We love being with our friends … we feel so blessed to share special moments with friends in our lives.

We come home, often with aches and pains, enjoy a nice meal and a glass of wine. Sometimes a hot tub. Home to relax.

This time I made a delicious One-Sheet Cilantro-Parmesan Broccoli Baked Salmon recipe.

My dad caught the Chinook Salmon at the mouth of the Rogue River and Pacific Ocean. There’s nothing quite like fresh salmon.

One-Sheet Cilantro-Parmesan Broccoli Baked Salmon

This recipe was inspired by Aggie’s Kitchen, who just made a Salmon Spinach Bake from a new cookbook, Sugar-Free Mom.

Using parchment paper, I cooked the broccoli for about 15 minutes, and then layered the salmon on top.

Made a delicious marinade of green onion, cilantro, lime juice, olive oil, and Parmesan cheese!

Laid the fresh salmon on top of the broccoli, added the cilantro marinade. Baked another 10 minutes.

Then ended with broiling the salmon for a few minutes before eating.

Wow! It was great.

I’ve found a lot of people are intimidated to cook salmon, or fish. It’s actually one of the easiest meals, and I love to serve it for dinner parties!

3 marinade tips.

Here are some salmon (fish) marinade tips, if you’re new to cooking with salmon:

-Marinades can be cooked or uncooked before using. If cooked, it must be completely cooled before adding to the seafood.

-You can make a marinade ahead of time (3 days), and refrigerate, so the flavors are steeped when ready to bake or grill.

-Double the marinade recipe and freeze half in a Ziploc bag for the next time you cook salmon. Easy—pull out of the freezer, thaw, and proceed with the recipe.

Using the same sheet pan, bake the broccoli, add the salmon, bake again – ENJOY!

Cook Time: 30 minutes

Ingredients
 

  • 4-6 salmon fillets
  • 6 heaping cups fresh broccoli florets
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • Kosher salt and fresh ground pepper
  • 2 green onions, scallions, chopped
  • 1 cup fresh cilantro
  • 1/4 cup lime juice
  • 2 Tbsp. olive oil
  • 2 tsp. Parmesan cheese, grated

Instructions
 

  • Preheat oven to 425 degrees. Line a sheet with parchment paper or foil. Place the broccoli florets on top.
  • Drizzle the broccoli with olive oil, 1/4 cup of soy sauce, and lightly salt and pepper. Roast for about 15 minutes.
  • Meanwhile, combine the green onions, cilantro, lime juice, olive oil, and Parmesan cheese in a small blender. Process until finely chopped. Cover and refrigerate until ready to use.
  • Remove the broccoli from the oven. Arrange the salmon fillets, skinned side down, atop the broccoli. Spread the marinade evenly over the fillets.
  • Roast for 10 minutes, until the salmon is nearly cooked. Use the back of a spatula to press down and make sure it doesn’t feel “spongy” and is firm.
  • Place the pan under the broiler for 3 minutes. Serve with the broccoli and a side of rice.
