Camping for us is relaxing, restful, rejuvenating, and refreshing. I love those 4 words! Taking the time to tune in to our own pace, agenda, and rhythm includes slowing down.

This past weekend, we spent 4 days with our dear friends, camping on the Williamson River in Oregon, hiking and summiting to the Mt. Scott’s lookout tower, which overlooks beautiful Crater Lake.

Up on the lookout tower you’ll see Mt. Shasta, Mt. McLaughlin, Mt. Thielsen’s spire, and off to the distance is Three Sisters.

The wildflowers were gorgeous—red paintbrush, purple penstemon, and western pasque flowers.

The skies were a little overcast, but the lake was bluer than ever!

Why we hike.

Here’s what we’ve learned about hiking with good friends: A good conversation can’t be hurried.

We keep a good pace, but there is no race.

When we got up to the tower, we each found our space to sit and enjoy our lunch.

Bring a good lunch and snack.

I brought along our favorite Blue Diamond Almonds (+ another favorite flavor, BOLD Sriracha).

Our hike was long and hot, but we started if off with a delicious waffle recipe that I brought from home. Since we knew we’d have full hookups, I brought my waffle baker! How fun is that!?

The secret to camping is being prepared with the menu, so all we had to do was plug in the baker, make the waffles, and serve!

Set the table.

And, I always like to set a festive table! Mix and match the dishes, no one seems to care!

Of course we also served them with delicious flavors, such as Chocolate, Blueberry, and our family-favorite, Toasted Coconut.

We love adding Greek Yogurt to our waffles, because it gives it a nice texture and sort of a sourdough flavor.

Another camping breakfast.

The next morning we enjoyed Greek yogurt with berries and more flavored almonds! Such an easy camping breakfast! Another family favorite is the Toasted Coconut.

And, what is camping without a good Scrabble game? And a healthy, sweet snack (love the Oven Roasted Dark Chocolate almonds).

Greek Yogurt Waffles with Blue Diamond Almonds

Freeze extra waffles in a plastic ziploc bag; toast in the toaster (frozen) before eating. If the batter seems too thick, add more water.

Ingredients
 

  • 4 1/2 cups baking mix
  • 2 1/2 cups water
  • 3 eggs
  • 3/4 cup canola oil
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 cup Greek yogurt
  • Orange zest
  • Blue Diamond Almonds, serve with your favorite flavors

Instructions
 

  • Mix all ingredients together with a whisk or large spoon. According to the waffle baker instructions, cook the waffles until light, crisp and golden on the outside.
  • Serve with butter, syrup, and your favorite almond flavors.
