Do you ever have people over for dinner, and the night stays with you for days? A few weeks ago this happened to me, after hosting a few people in our backyard, with lights strung above the table, I still remember the feeling, even though we’ve hosted a ton of parties over the summer, because it was sweet, meaningful, but also hard. It was a feeling that hung in my mind for days!

Sometimes people going through hard times come into our home. It may look pretty on the outside, as I post Instagram shots of what the table looks like before the guests arrive, but during, and then after … you really feel what others are going through.

As we walk through life with our friends, some nights stand out more than others.

Being there for our friends.

Some nights are truly like a lifeboat in the port of a storm, a moment where we’re connected with painful details that feels dark and tangled. Some evenings are so light-hearted, we laugh until our facial lines (we have many now) feel permanently stuck. Some nights are whimsical, warm, with healing and soulful encouragement and hope.

We don’t know everyone’s stories when they show up, or what their day was like. Some guests definately open up more than others. I’m sure I’ve said dumb things like, it will be better tomorrow, or it’s just a season, or we just can’t fear. Duh.

Sometimes we just need to sit back, listen, make good eye contact, and reach out and give a deep hug, and say I’m sorry. No Christian ease, no long drawn-out advice or an answer, no arrogance or pride.

If the moment arises, we can offer heart-felt words of optimism and hope.

Golden Rice Salad.

On this night in particular, with so much love from our friends around us, we indulged in a simple barbecue meal with a few side salads. The Golden Rice Salad was my favorite. It’s a spin on the traditional potato salad, and our friend got the recipe from a friend (thank you, Marybeth). I love those recipes, the hand-me-down good eats that are brought to a dinner party.

The food is good, and for sure adds to the evening, but in the moments of friendship, when we’re in the company that we love, it’s interesting how food forces us to enjoy the goodness of one another, and stick around the table just a little bit longer, and really get down to the nitty-gritty of life.

Golden Rice Salad

Ingredients
 

  • 4 1/2 cups hot cooked rice, 1 1/2 raw rice cooked in 3 cups chicken broth
  • 1/4 cup oil
  • 2 tbsp. vinegar
  • Salt and pepper to taste
  • 1/2 cup mayonnaise, I used Veganniase
  • 2 Tbsp. prepared mustard
  • 1/8 tsp. red cayenne pepper
  • 1 cup black olives, sliced
  • 2 hard boiled eggs, diced
  • 1 1/2 cup celery, chopped
  • 1 carrot, chopped
  • 1/4 cup dill pickle (chopped0
  • 1 small onion, chopped

Instructions
 

  • Cook rice in chicken broth (follow directions).
  • Blend together the oil, vinegar, salt and pepper, pour over hot cooked rice. Toss and set aside to cool.
  • Add remaining ingredients and toss with die. Chill thoroughly. Green onion tops, parsley, or cilantro can be added for garnish.
