Pumpkin Flourless Chocolate Cake

What is a flourless cake?

A flourless chocolate cake is a “fallen” cake made from a chocolate custard base. It’s a rather dense cake, made with whole eggs, added to a melted butter  and chocolate mixture.

This is a great cake for November … for the holidays ahead, or just because.

How to make a flourless chocolate cake

Of course, I always use a good chocolate, and my favorite red springform pan, when making flourless cakes. I also spray the bottom and use parchment paper, so the cake doesn’t stick to the bottom.

  1. Melt butter, sugar and chocolate in the microwave (I always melt on 50% power) and cool!
  2. Whisk eggs in small bowl until blended; gradually stirring in the chocolate mixture. Then you add coffee and pumpkin pie spice.
  3. For the pan, cut out a round piece of parchment paper and place on the bottom of a 9-inch springform pan. Pour the batter into the pan!
  4. Bake–the center will be a little bit gooey. Run a knife around rim of pan to loosen cake; cool before removing rim. Place the cake on a plate and sprinkle cake with powdered sugar!

Ingredients
 

  • 3/4 cup butter
  • 1-1/2 cups granulated sugar
  • 6 oz. unsweetened chocolate, chopped
  • 6 oz. bittersweet chocolate, chopped
  • 6 eggs
  • 3 Tbsp. brewed strong coffee, I used espresso
  • 2 tsp. pumpkin pie spice
  • 2 Tbsp. powdered sugar

Instructions
 

  • Heat oven to 350 degrees.
  • Microwave butter, granulated sugar and chocolate in large microwaveable bowl on MEDIUM for 3-4 minutes, or until chocolate and butter are completely melted and mixture is well blended. Cool slightly.
  • Whisk eggs in small bowl until blended; gradually stir into chocolate mixture. Stir in coffee and pumpkin pie spice.
  • Cut out a round piece of parchment paper for the bottom of a 9-inch springform pan. Pour batter into the pan sprayed with cooking spray.
  • Bake 45 minutes or until toothpick inserted in center comes out with moist crumbs. Run knife around rim of pan to loosen cake; cool before removing rim. Place the cake on a plate and sprinkle cake with powdered sugar; serve!
