Stuffed mini peppers

We love munching on mini peppers for a healthy snack, or they are great with this Holiday Cilantro Chive Greek Yogurt Dip. But today’s recipe is super easy and fun using up those leftovers!

Getting ready for company

But first, I love getting ready for company, because it helps me declutter my house. When my house is cluttered, my mind goes a little crazy, but when I get it back in control (organized) I feel a deep sense of calm. Do you ever feel this way? And where does all this paperwork come from? Even though I feel I have a good system in place for paperwork, bills, receipts, etc, all I have to do is go out of town, and it’s a mess again.

I’m starting in the garage this week, and I’m going to work my way through the house, because next week we will have everyone home, plus extra guests. I just love the holidays!

It’s not what I need to do this next week, or my list of blog posts I need to get done, getting recipes created, chores before our out-of-town company arrives, shopping and cleaning, that really matter. It’s about embracing each moment, what I can learn from it, share with others, pray and change about myself. It’s about leaning into the things that I don’t like to do, facing the chores and cleaning with a good attitude, that makes a difference in my outlook.

Clean off the kitchen counter!

Right? Today I’m turning on the music and starting off with a clean kitchen counter. My counter is the junk-collector, so getting it sparkling clean before I tackle my chores, always helps!

Funny how we each have our ways of getting stuff done.

Stuffing, or dressing?

This recipe today is an easy appetizer, and a great way to use leftover dressing from the Thanksgiving feast. Which, by the way, do you call it stuffing or dressing?

I looked it up online and this is what Butterball is saying:

If you call it dressing, odds are you cook it separately from the turkey – and you live in the southern region of the United States. Otherwise, you’re a stuffing family, and you cook it in the turkey.

I really never knew!

Dressing-Stuffed Mini Peppers

Ingredients
 

  • 1 dozen mini sweet peppers, red, orange, and yellow
  • 1 1/2 cup leftover dressing, stuffing
  • 3/4 cup Mozzarella cheese, divided
  • Fresh thyme, finely chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare the peppers by slicing off the “top” (concave) side of the peppers, leaving the stem. Scoop out the seeds and the membrane.
  • In a bowl, combine the stuffing and 1/2 cup cheese. Heat in microwave for 1-2 minutes until softened and cheese is melted. Allow to cool for a few minutes.
  • Spoon the stuffing cheese mixture into the peppers, pressing it into each half. Sprinkle with remaining 1/4 cup cheese.
  • Arrange the peppers on a baking sheet and bake for around 18 minutes, until peppers are softened and cheese is hot and bubbly.
  • Garnish with fresh thyme; serve immediately.
