We loved this soup in our home this past week, Sausage Cabbage Vegetable Soup. It’s such a wintery recipe, so good with lots of cabbage (which is rich in isothiocyanates, compounds that bolster the body’s natural detox system),  I shared it with a few friends for dinner.

Don’t you just love a healthy “soup night” dinner?

The sun came out this week, and it was a beautiful 64 degrees in our backyard! I was making this soup in my kitchen, with the back door wide open! A glorious Oregon sunny day!

Now, on to a new subject.

Maybe you’re feeling that your life is ordinary and boring, or it’s not the way you thought it would be.

Add others in.

One of the things that Paul and I do is to make a conscious effort to add others into our lives. Not only for us (because we all know that we need each other, and our lives are richer when we connect with others), but for the sake of our children. Just last night, I heard our almost 24 year old talking about a certain person in our family’s life, who in a sense is a role model for our son. He used words such as courageous, strong, compassionate, faithful–he has integrity. This is such an important part of parenting. Making sure that our children have strong people and role models in their lives, besides us. Because what if something happens to me and Paul? I very much feel our kids would be surrounded with so much love and support if that dreaded day would ever come.

But it’s not just people. It’s time. The more we invest, give away this precious thing that we have – our time – to others, the richer our lives become.

Invest + give away.

I’ve seen it over and over. In a way, it’s like a mathematical formula.

Your Life + Others + Time = Investment.

So Paul and I figured out, 25 years ago (this June!), how we could do this together. Since we both loved to eat, and I grew up with hospitable parents, we started inviting others into our home, even for a simple meal.

Soup Night Dinners.

Soup nights can be very fun and special. Make a pot of soup, serve a loaf of crunchy bread, maybe ask your guests to bring a light dessert (or not). That’s it.

You sit and talk for hours, enjoy a nourishing meal. You invest.

And then you are richly blessed!

Sausage Cabbage Vegetable Soup

This French-peasant soup is delicious, served with crunchy bread for a “soup night” dinner!

Ingredients
 

  • 2 Tbsp. olive oil
  • 12 oz. Italian sausage, I used Aidells pre-cooked
  • 1 large onion, finely chopped
  • 3 cloves garlic, pressed
  • 2-3 carrots, peeled and chopped
  • 1 cup celery, chopped
  • 1 small head green cabbage, thinly slices (about 10 cups)
  • 8 cups chicken or vegetable stock
  • 3/4 cup dry white wine
  • 1 cup chopped fresh tomatoes
  • 1 Tbsp. chopped fresh rosemary
  • 1 Tbsp. chopped fresh thyme
  • Fresh ground pepper
  • Fresh Parmesan cheese

Instructions
 

  • Heat olive oil in a large pan over medium high heat. Add onion and cook for 4-5 minutes; add garlic, stir and cook for additional minute.
  • Add the sausage and cook for 5-7 minutes.
  • Reduce the heat to medium and add the carrots and celery; cook for 2-3 minutes. Add the cabbage; cook until starting to wilt, about 2 minutes.
  • Continue to stir and add the broth, wine, and tomatoes. Add the fresh rosemary and thyme. Increase heat to high and bring to a boil. Reduce heat to low and simmer for up to 1 hour.
  • Serve with fresh Parmesan cheese and fresh ground pepper.
