If you’re looking for skinny pasta recipes, today I’m sharing a Skinny Marinara Zoodle Pasta recipe, a healthy recipe of spiralized zucchini with marina and your favorite meatballs (you can make ahead and freeze, or buy pre-made) to serve to your family this week!

Skinny Marinara Zoodle Pasta

Ingredients
 

  • 2 Tbsp. extra virgin olive oil
  • medium sweet white onion
  • 6 garlic cloves, peeled and minced (or pressed)
  • 1 28-ounce can diced tomatoes (do not drain)
  • 2 Tbsp. tomato paste
  • 1/2 cup fresh basil leaves, chopped
  • 1 1/2 tsp.  coarse salt
  • 1/4 tsp.  black pepper
  • 1/8 tsp.  crushed red pepper flakes, or a pinch of cayenne
  • 8-10 small zucchinis, spiralized
  • Freshly-grated Parmesan cheese, for grating
  • Prepared meatballs – optional, I buy Aidells brand

Instructions
 

  • Heat oil in large pan over medium-high heat. Add onions and saute for 5 minutes, stirring until the onions are soft. Add garlic and saute for 1 minute, stirring frequently. Add in the tomatoes, tomato paste, basil, salt, pepper, and crushed red pepper flakes, then stir to combine.
  • Continue cooking for 5 minutes, then turn the heat down to medium-low and simmer for 15 minutes. Taste, and season the sauce with additional salt and pepper if needed.
  • Add in the prepared meatballs (optional).
  • In the meantime, using the KitchenAid spiralizer, spiralize the zucchini . Place the zucchini on paper towels and salt, allowing to sit for 30 minutes. In a large saute pan over medium heat, heat the oil and toss the zucchini noodles, cooking for 2-3 minutes, right before ready to serve.
  • Place the zoodles on a plate, spooning sauce on top, with several meatballs. Sprinkle with fresh Parmesan cheese; garnish with fresh basil leaf and serve!
