These Baked Bacon Egg Pretzel Rolls are delicious served for brunch, lunch, or even dinner! This recipe serves 12, so double up if you’re hosting a large gathering!

We’re a “breakfast-for-dinner” kind of family. Are you? As long as I can remember, even as a little girl, I loved breakfast food for dinner.

This time I had sitting on my kitchen counter a bag of Costco’s pretzel rolls, thinking how easy it would be to scoop out the center and bake eggs inside, creating a nice crusty crust on the outside, and creamy egg mixture on the inside. Indeed it was a great idea, because they turned out fabulous!

I realize, I’ve been cooking a lot with bacon lately. Funny story, Abby and I were at Costco walking by the bacon refrigerator, and a guy stopped us. Have you tried this bacon? It’s the very best! So, we looked at each other, and we put it in our cart.

So glad we did. It’s Hempler’s Applewood Smoked. Have you tried it? Mm-m-m ….. {thus, the bacon recipes this past week!}

I garnished them with more spring onions, a slice of avocado, and a cherry tomato half! But first, you cut out the center of a preztel roll and fill with the bacon mixture, then pour in the eggs, then bake!

For sure you want to serve these nice and hot, right out of the oven after sitting for only 5 minutes!

Last spring we hosted a graduation party in our backyard for our son and a family friend, Emily {friends since birth}. This recipe would have been delightful served with a yogurt bar, these Canadian Bacon Kebabs, and Ree’s Caramel Apple Cinnamon rolls! I love The Pioneer Woman, and did you know she has a brand new cookware line coming out this Fall? Very pretty, very exciting.

So for a fabulous brunch, lunch, dinner, or for holiday fare (Easter and Mother’s Day are coming!) these little Baked Bacon Egg Pretzel Rolls are scrumptious!

Baked Bacon Egg Pretzel Rolls

Yield: 12

Prep Time: 15 minutes

Cook Time: 25 minutes + 5 cooling

Total Time: 45 minutes

Makes 12 pretzel rolls.

Ingredients:

  • 12 pretzel rolls
  • 5 eggs
  • 1/2 cup heavy cream
  • 6 strips precooked bacon, cooked & crumbled
  • 1/2 cup gruyere cheese, grated
  • 2 green onions, thinly sliced
  • Salt and pepper
  • Avocado
  • Cherry tomatoes

 

Directions:

1. Preheat oven to 350 degrees F.

2. Scoop out the center of each roll, about 1/2 inch to the bottom.

3. Beat the eggs and cream in a mixing bowl. Gently whisk in the cheese, bacon, and one green onion. Salt and pepper to taste.

4. Cook the precooked bacon in microwave for 1 minute. Cool; break into small pieces.

5. Divide the mixture into each roll, placing on a parchment paper-lined baking sheet.

6. Bake for 25 minutes or until egg mixture is set in the center.

7. Allow to cool for about 5 minutes.

8. Garnish each roll with remaining avocado slices, tomato, and green onion.

  2. These look great. Often I’ll serve a quiche or a loaded pan of scrambled eggs with lots of veggies in it…hubby and I love it. our youngest, not so much. I watched the chew a few months ago and they did something like this but with french bread rolls…I like the idea of pretzel rolls. YUM

  6. Oh yum. I need to try this….I saw Clinton Kelly do this on The Chew, but with a longer type roll and I thought “that is such a great idea”. I still haven’t tried it, and I LOVE pretzel rolls.
