Friends, today I thought I’d share with you one of my favorite beauties in Oregon, Mount Thielsen, a dramatic horn-shaped mountain peak that always surprises me, as we approach Diamond Lake, driving through the Southern Oregon Cascades just north of Crater Lake, plus a yummy recipe for Valentine’s Day, Black Cherry Almond Crescent Ring Dessert.

Maybe you’ve seen this beauty, too. It’s a landmark in Oregon.

Once we come around the bend and peak at Crater Lake, we’re on our way to our new home in central Oregon.

When I leave Medford, I’m leaving behind my family, my people, and my friends of so many years, and there’s a tug in my heart. But I’m coming home now to something I was so scared to even try a year ago–new friendships, connections, surroundings, pouring ourselves into everything new.

It’s a lighter feel, this newness–the crisp air surrounding our little mountain home, with icicles hanging down from the roof of our home, the smell of the wood stove, going to an event and only knowing maybe 2 people, trying new things, branching out, being vulnerable. There’s a sense of simplicity to this newness that is hard to explain.

I feel more rested in this mountain air. I always wanted to take a nap back home, but now I don’t even think about a nap. Not that naps are wrong; I just want to feel the sweetness of working hard, and relaxing at night with my family.

Our days are precious, my husband and I remind each other almost daily. I’m thankful for Paul, our marriage, for the gentle daily weaving together of our lives, now with our adult kids.

Adult kids. I never thought the day would come. Actually, how in the world did it happen so fast?

This night I made a yummy dessert. An oldie but goodie from my Pampered Chef days (1997), but this time made with Amarena Toschi Black Cherries (from Italy!). Oh, boy, it was good.

Amarena Toschi Black Cherries are the best. I always say, “Let’s open up a jar of glam!”

They are so pretty, elegant, glamorous, and sweet, usually sold in specialty shops (and always in the Italian section).

Lay out the crescents in a perfect ring.

Add almond extract to the cream cheese mixture. Almond extract makes everything better.

Place the succulent cherries on top, and tuck the tips of the crescent up and over to make a pretty ring.

Bake and dust with powdered sugar!

And serve a small piece to your family.

Simple is good, especially with a bite of sweetness.

Black Cherry Almond Crescent Ring Dessert

You can replace the black cherries with 1 can of regular cherry pie filling (but it’s not quite as good as the gourmet black cherries).
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Ingredients
 

  • 2 packages, 8 ounces each refrigerated crescent rolls
  • 1 package 8 oz. cream cheese, you can use “light”
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp. almond extract
  • 1 jar Amarena Toschi Black Cherries, lightly drained

Instructions
 

  • Preheat oven to 375. Unroll crescent dough; lay out on your cooking stone or cookie sheet (see photo), in a circle, with wide ends toward the center.
  • Mix cream cheese, sugar, egg and extract together. Spread onto the crescent dough, around the ring.
  • Spoon the cherry pie filling on top.
  • Bring the crescent dough tips up and over the mixture, tucking into the inside of the ring.
  • Bake for 25-30 minutes or until crust is golden brown.
