There are times we are so busy, in passing, we say our quick hellos, how are you, let’s get together. But when I say “let’s get together” I sometimes feel conflicted inside, because I don’t always follow through. Of course, there’s the other side of the coin, where people say this to me, and they do not follow through. But the bottom line is that life is so fast—paced, so hurried, that we don’t often connect in the way we should. You know, the way where you sit around the table, eat, talk, serve dessert, and drink coffee.

How can we connect more?

I have been trying to think about how we can connect more with people, because when my husband and I truly get to know people around our table, life feels so much better. For us, a night spent with friends–even new people–is better than vegging out at 8 pm, watching our favorite television shows. Of course we have nights where we turn on Netflix at 8 pm, but we have to challenge ourselves to stop making life all about us, and more about others!

I’m not perfect, of course. I’m sure I’ve let a few let’s get together’s slip through the cracks, but it truly is important to me!

How to follow through and make the INVITE:

1. It takes courage to make the initial invite. When you hear or say “let’s get together,” challenge yourself to do something about it. Give yourself 1 week to follow through.

2. Talk to your spouse, or another couple, or a few friends who would be a good fit to invite over as well. Entertaining for 2 or 3 is about the same amount of work as for 6 or 7.

3. Call or text, and get the date on the calendar. You’ll have a better chance of success and have a wonderful time with family and friends!

Trust me, and know the rewards for bringing people together are far greater than yourselves. You may not see it at the time, but something magical and spiritual will happen in your home on that night.

Salmon
Green Salad
Carrot Honey Pistachio Salad
Stuffed Quinoa Peppers
Local bread

Carrot Honey Pistachio Salad.

The salad goes like this…. Grate the carrots; layer the ingredients for a pretty presentation. Then drizzle the dressing over the top.

Honey is the secret ingredient. Delicous!

It’s a great presentation, but equally delicious in flavor! ENJOY!

Carrot Honey Pistachio Salad

Ingredients
 

  • 6 carrots, about 4 cups, shredded
  • 1/2 cup Feta cheese
  • 1/2 cup pistachio nuts
  • 1/2 cup dried figs cut up, or use raisins
  • Fresh parsley
  • Fresh mint
  • 3 Tbsp. olive oil
  • 1/2 lemon, juiced
  • Salt and pepper
  • 3 Tbsp. plain yogurt
  • 1/2 to 3/4 tsp. Harissa, or hot sauce
  • 1/2 tsp. cumin
  • 1 tsp. paprika
  • 1 garlic clove
  • Honey for drizzle
  •  

Instructions
 

  • Layer the carrots, feta cheese, pistachio nuts, and dried figs (or carrots) on a platter. Chop the herbs and sprinkle on top.
  • In a small bowl, combine the oil, lemon, salt and pepper, yogurt, cumin, paprika, and garlic. Mix well.
  • Drizzle the dressing over the salad. Drizzle honey on top; serve.
