<p>When people come into my home, they always say &#8230; where did you get that cool picture?</p>
<p>The cool picture is actually the icon of my blog, Reluctant Entertainer, as it&#8217;s a <a href="http://reluctantentertainer.com/2012/05/bargain-entertaining-with-dollar-store-goblets/">Dollar Store Goblet</a> which I write about often. </p>

<p>My husband took the picture about 6 years ago, and then we turned it into a beautiful rolled canvas.</p>

If I could, I would, because it shows that your mom is really worth the time. <p>When I think of my mom, three words come to mind: <em><strong>hospitable, warm, and loving</strong></em>.</p>
<p>I wrote about her in my book, <em><a href="http://www.amazon.com/Reluctant-Entertainer-Womans-Gracious-Hospitality/dp/0764207504/ref=sr_1_1?ie=UTF8&#038;s=books&#038;qid=1256943719&#038;sr=1-1">The Reluctant Entertainer</a></em>, of which I&#8217;m giving away a signed copy today, a perfect gift idea for Mother&#8217;s Day. I was fortunate growing up, because my mother passed on to me the gift of loving people through hospitality. My mom didn&#8217;t get caught up in over-commitments or impressing others with over-the-top entertaining. In fact, she didn&#8217;t rely on TV, magazines, or the internet for entertaining ideas. She just used her beautiful elegant China, a few favorite cook books and aprons, and a closet with starched linens ready to be spread for her dinner guests. Mom just knew the heart of hospitality and she didn&#8217;t overcomplicate it: <em><strong>simplicity and love</strong></em>. </p>
<p>She was my role model years ago. And then when I was in my early 30s, breast cancer attacked my mom, and then ovarian cancer, eventually taking her life. I had 3 small children and it was a hard time in my life. (Mom passed away 9 months after this picture was taken.)</p>

<p>Chicken Noodle Soup. It&#8217;s good for the family, good for the soul, good for the &#8220;sickies,&#8221; and brings comfort and warmth and togetherness and love.</p>

<p>My scenario? Last week, <a href="http://goo.gl/oQMbd" target="_blank">Barilla</a>® sent me a few boxes of their Whole Grain Pasta to try. I knew I&#8217;d make spaghetti with the spaghetti noodles, but decided to try something different with the shells (<em>conchiglie</em>). I wanted to make a Slow Cooker Roasted Chicken Soup with Pasta. The soup seemed like a good choice, especially at this wintery, cold time of year (we had our first snow day the day I made it), and with kids and family members getting sick.</p>
<p>I filled my slow cooker to the BRIM with delicious ingredients, including Barilla® pasta!</p>

<p>This recipe might be a different way of making the soup, but using a pre-roasted chicken from the market was the bomb! So easy, so flavorful, with results that were fantastic and loved by all. I was able to feed my family several meals with just one box of pasta!</p>
<p>I quizzed them about how they liked the pasta and we compared it to the egg noodles I usually use (<a href="http://goo.gl/oQMbd" target="_blank">Barilla® Whole Grain</a> is much healthier!). <h2 class="fn">Recipe: Slow Cooker Roasted Chicken Soup with Pasta {ReluctantEntertainer.com}</h2>

<li class="ingredient">2 quarts chicken broth</li>
<li class="ingredient">2 Tbsp. olive oil</li>
<li class="ingredient">1 1/2 cup carrots, cut into 1/4-inch slices</li>
<li class="ingredient">1 1/2 cup celery, cut into 1/4-inch slices</li>
<li class="ingredient">1 1/2 cup onions, chopped</li>
<li class="ingredient">3 garlic cloves, minced</li>
<li class="ingredient">2 fresh bay leaves</li>
<li class="ingredient">1 teaspoon dried thyme</li>
<li class="ingredient">4 teaspoons salt ( to taste)</li>
<li class="ingredient">1 teaspoon fresh ground black pepper, to taste</li>
<li class="ingredient">1 (store-bought)roasted chicken</li>
<li class="ingredient">12 oz. frozen Green Peas</li>
<li class="ingredient">1 13 oz. box Barilla® Whole Grain Pasta, uncooked In medium pan</li>

<ol class="instructions">
<li>Heat olive oil and sautee garlic, onions, celery, and carrots for 5 minutes. In slow-cooker bowl combine carrots, celery, onion, garlic mixture and bay leaves, thyme, salt and pepper.</li>
<li>Place the whole roasted chicken on top of the vegetables. Cover with 1 quart of chicken stock and spices. Cover slow cooker with lid and cook on high 4-5 hours.</li>
<li>Transfer chicken to cutting board. Discard bay leaves. Add 1 quart of chicken stock. Add pasta to simmering broth, cook for half the required time; let the pasta rest for 30 minutes to absorb the flavors and finish cooking.</li>
<li>While the pasta cooks, remove and discard skin, fat and bones from chicken; chop up the meat.</li>
<li>Return the chicken to soup; put the frozen peas in hot water for 1-2 minutes; add the peas.</li>
<li>Stir, make sure heated through, salt and season to taste. SERVE!</li>

<p>In my home I don&#8217;t monitor our morning meal as much as I used to when the kids were little, because my two youngest are now in high school (and one away at college); they all make their own hot breakfasts. </p>
<p>But once I discovered this cool kitchen gadget years ago (I found it at Wal Mart for $3.29), breakfast-making got a whole lot easier for my family. </p>

<p>It&#8217;s a little microwavable bowl that holds an egg, plus omelete-type ingredients, called the Nordic Ware Microwave Egg Muffin Pan.</p>

<p>-Sprinkle with cheese and let sit for 30 seconds.</p>
<p>-Serve on an english muffin or toast.</p></blockquote>
<p>It&#8217;s that easy! And your kids can make their own breakfast, almost at any age.</p>

<p>Love is in the air! And most of us think about only spending Valentine&#8217;s dinners with our significant others. Which for me, is what I love.</p>
<p>But how about also hosting a party the &#8220;week of&#8221; Valentine&#8217;s Day for the friends you love? </p>

<p>I&#8217;ve done this several years in a row, and last year we were invited to our friends&#8217;, where we got to meet 2 new couples! It was awesome because I didn&#8217;t have to be the hostess, but got to be the guest!</p>
<blockquote><p><strong>Here are some simple tips for hosting a Valentine’s Dinner Party</strong>:</p>
<p>-Get together with your spouse and decide who you want to invite, and remember that just because it&#8217;s Valentine&#8217;s Day, the list doesn&#8217;t  have to include couples! Think about your single friends as well.</p>
<p>-Make it as easy on yourself. Invite early so everyone can get the &#8220;date&#8221; on the calendar. Use <a href="http://new.evite.com/#home">Evite.com</a> for new friends, because you can attach a map to your house.  You include party details, add your guest list, click and send.  It&#8217;s that easy!</p>
<p>-Is it possible to move your table to a new area? In my case, not really (though for summer outdoor entertaining, yes!) Change it up a bit and make it special!</p>
<p>-I used my wedding dishes (standard white) and of course, Dollar Store goblets, and added in red accents. And I also added the adorable <a href="http://lovefeasttable.com/blog/lovefeast-heartgramsperfect-valentine/">HeartGrams</a> (giveaway today, read more, below). Pretty decorating.</p>
<p>-Think of a simple meal you can either make ahead of time like lasagna or even spaghetti (Lady and the Tramp?), or one that only takes a few minutes like my QUICK Angel Hair Shrimp Scampi <a href="http://reluctantentertainer.com/the-reluctant-entertainer-by-sandy-coughlin/">recipe found in my book</a> (and so easy!) Buy fresh pasta and bread and you&#8217;re set!</p>
<p>-Ask your guests to each bring a bottle of wine or beverage of choice, or a light appetizer. You could even ask for a platter of strawberry-dipped chocolates to pass around while you&#8217;re rinsing the dishes and preparing for the next course: dessert!</p>
<p>-Store-bought desserts can be tantalizing if fresh and unique. IE, we have a store in Ashland, Oregon called Market of Choice. They have killer desserts that are perfect for last-minute parties, to just bring home, and serve on your own beautiful glass pedestal or serving platter.</p>
<p>-Conversation will just roll &#8230; it always does. Remember this dinner party is not designed for Valentine&#8217;s Day (you should be out with your sweetie!), but for the &#8220;week of.&#8221; Spread love, through encouraging words, and make your guests feel special! </p></blockquote>
<p>Mix it up, both couples and singles, and just enjoy a great night together, with all the hearts, red and white touches, and a &#8220;love is in the air&#8221; attitude.</p>

In the afternoon of our visit I was able to actually tour the gift basket department, as we got to make one of our own. <a href="http://www.harryanddavid.com/gifts/store/gift_____gift-baskets">Harry and David</a> is trying to give an entire gift experience, so the packaging and the personalization of the gifts is important.</p>

<p>I adored meeting Pauline, who has worked at H&#038;D for years. She even knew my 92 year-old Auntie who was a retiring supervisor (she devoted her life to H&#038;D) just as she was coming to work there, many years ago.</p>
<p>They have a very elaborate process for packing the baskets and it goes like this. </p>
<p>You follow a chart, pack the basket, and then tuck the plastic around the basket so it won’t unravel. </p>
<p>There&#8217;s always a personalized note with the name of the person who packed the basket.</p>

It&#8217;s fantastic and a different alternative for Thanksgiving next month. </p>

<p>The taste and flavor from tossing the tortillas on the grill, and mixing in with the peppers to make a &#8220;stuffing&#8221; was brilliant!</p>

<li class="ingredient">For Chicken:</li>
<li class="ingredient">5 pounds whole chicken</li>
<li class="ingredient">1 teaspoon kosher salt</li>
<li class="ingredient">1 teaspoon ground pepper</li>
<li class="ingredient">2 teaspoons canola oil</li>
<li class="ingredient">1 tablespoon cumin seed</li>
<li class="ingredient">3 tablespoons agave syrup or honey</li>
<li class="ingredient">For Stuffing:</li>
<li class="ingredient">1 each green pasilla chile* </li>
<li class="ingredient">1 each jalapeño pepper* </li>
<li class="ingredient">4 each corn tortillas (6 inch)</li>
<li class="ingredient">1 can (15 ounces) BUSH&#8217;S® Black Beans or BUSH&#8217;S® Reduced Sodium Black Beans, drained and rinsed </li>
<li class="ingredient">¼ cup chicken stock</li>
<li class="ingredient">¼ teaspoon smoked paprika</li>
<li class="ingredient">¼ teaspoon kosher salt</li>
<li class="ingredient">¼ cup fresh cilantro, chopped</li>
<li class="ingredient">6 wedges lime</li>
</ul>

<h4 class="instructions">Instructions</h4>
<ol class="instructions">
<li>Cleanout inside of chicken, rinse chicken inside and out with cold water. Pat dry with paper towel and cut chicken into pieces. </li>
<li>Season chicken pieces with salt and pepper and lightly cover with oil. Mix cumin seeds with agave syrup and set aside. </li>
<li>Set one side of clean, well-oiled grill to medium high heat and the other side to medium low heat. When grill is hot, using tongs, place chicken skin side down on hot side of grill until there are nice grill marks (about 5 minutes). Then flip chicken over (skin side up), place on cooler side of grill, close grill lid and let chicken cook (3-5 minutes for breast meat; 12 minutes for bone in leg/thigh meat).</li>
<li> </li>
<li>In the last two minutes of cooking, brush cumin seeds and agave syrup on both sides of chicken and cook each side for one minute. Chicken is done when internal temperature reaches 160 degrees F. </li>
<li>Remove chicken from grill and let rest at least 10 minutes before serving. </li>
<li>For Stuffing: Using metal tongs blacken chile and jalapeño peppers on the grill for 3 minutes per side. Place chile and jalapeño in small bowl, cover with foil tightly. Let sit for 10 minutes. Once cool, wipe skin off (do not rinse under water). Discard stems. Discard seeds (unless you want it spicier). Chop chile and jalapeño into ½-inch pieces. Set aside. </li>
<li>Using metal tongs, place tortillas on the grill for 30 seconds on each side or until slightly charred. Chop tortillas into ¾-inch strips.</li>
<li>Pour black beans in medium-sized grill-safe pan. Add chile, jalapeño, tortillas, chicken stock, paprika and ¼ teaspoon salt. Place the pan directly on the grill and heat just until mixture comes to a boil. Remove pan from heat and set aside to cool briefly.  </li>
<li>Serve chicken with a side of black bean stuffing and garnish with cilantro and lime wedges.</li>
<li>*Substitution: Use ½ cup canned roasted chiles in place of green pasilla chile and jalapeño pepper.</li>

<p>We have an older VW Westfalia pop-up camper that we camp in. My husband will take the boys out fishing and they&#8217;ll spend the night, or he and I will take a 24-hour camping date night trip. Our boys recently went on a backpacking trip, and when our kids were little we camped a lot as an entire family. Now that we have 3 teens, and with jobs and sports, it&#8217;s hard for us to all get to the great outdoors together, unless it&#8217;s a planned vacation.</p>

It&#8217;s not always perfect and clean, and you learn to roll with the punches. Weather can change on you, but if you&#8217;re dry and warm, it&#8217;s all good. The food always tastes better. The air feels fresher and the fires add an element of surprise and wonder, especially for the kids.

<p>Camping creates unity and I&#8217;m thankful for the years our family has made outdoor memories this way. Having the right &#8220;gear&#8221; definitely adds an element of comfort and ease.</p>

What I want to share today is #56: Use <a href="http://reluctantentertainer.com/2010/01/kid-memory-binders-organized-and-easy/">memory binders</a> to organize your kids&#8217; memories or keepsakes</p>
<p>Laura and I have shared the same method and since about 2000, I will say my kids&#8217; memories are stored and there&#8217;s easy access for reading through the binders. It&#8217;s a fabulous way, and so easy, if you have kids. This might be a new concept to some of you, but my faithful readers have heard me chat about this for years. <img src='http://reluctantentertainer.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>My friend, Heidi, recently reminded me of one thing we both have in common. I have 3 teenagers and she has 3 kids under the age of 5, but we both are not crazy about the time involved in  scrapbooking, and wanted to incorporate our kids&#8217; memories into something tangible, with easy access for both us and for our kids&#8217; enjoyment. (I thumbed through my oldest son&#8217;s book one year ago as we sent him off to college, and found a <a href="http://reluctantentertainer.com/2010/09/elliot-waves-good-bye-and-memory-binders-link/">very sentimental letter</a>. I try to fill the books with anything memorable that will be fun for the kids to look at as they get older.)</p>

<p>I&#8217;m so excited to tell you about a nifty new napkin that I&#8217;ve found, one that I love for summer entertaining.</p>
<p>They are called <a href="http://www.rolldrapuk.com/">MyDrap Napkins</a> and they are brilliant!</p>
<p>They are cotton-linen napkins that tear off a roll. They can be washed 5-6 times and reused and then are just thrown away. </p>

<p>And then ironed them, here.</p>

<p>They look like fine cotton napkins, even edged in white, and are perfect for so many occasions when you don&#8217;t want to use your fine linen napkins.  </p>
<p>They are perfect for cocktail and dinner parties, as well as picnics, dinners on the beach &#8212; whatever and whenever!. </p>
<p>They are made from fibers obtained from the flowers of flax and cotton plants and are biodegradable. </p>

<p>The already used (I washed and ironed them) napkins were perfect, as I folded them over like an appetizer napkin.</p>

<p>We enjoyed some cherries out by the pool. By the way, have I told you how much <a href="http://reluctantentertainer.com/2011/04/bushs-black-bean-brownies-with-home-canned-cherries-and-applesauce/">I love cherries</a>? They are messy to can, but OH, so delicious! Do you ever sit outside with a bowl of fruit and just nibble away? It&#8217;s one of my favorite things to do in the summertime. </p>
<p><strong>And enjoying a bowl of fruit is even better when you&#8217;re in the presence of a friend!</strong></p>
