Friends, I love the thought of a bubbling spring of JOY spilling over to others’ lives, don’t you? I know we all go through seasons where happiness comes and goes, but not matter what, joy is deeper, and even in the toughest times, we can experience it.

I was thinking about my friends who came for dinner a week ago, and how much joy was in the house. Not only do we care deeply for one another, everyone got in and helped, felt right at home, got in and did the dishes, and I think we’d all agree that there was a spirit of love that we all felt.

Joy, joy, joy …

Hospitality comes back full circle, too … you open your home, invite others in, do the work, make it happen … it brings joy. Then, the next time, someone else does the same thing and then YOU are invited.

Here are a few things that I’ve found instigate joy … :)

1. Being grateful is probably the biggest factor in becoming a joyful person. When our heart is giving thanks for all the blessings in life, just reflecting on those, appreciating them in the moment, is powerful.

2. Identify what makes you happy—for me, one thing is hosting a dinner party and bringing all my friends together. Yes, it’s a lot of work, but it just fills up my love cup!

3. Express your caring by finding ways to make a contribution to others, to help give others’ lives greater meaning.

4. Spend some regular time with a creative outlet like writing in your journal, watching your favorite DIY TV show working on a craft project?, yoga or exercise, or walking your dog, accomplishing a task, or reading a book. It makes you feel alive.

Today I’m sharing one of my favorite summer salads, Chicken Curry Cashew Salad. It’s full of veggies and delcious flavor! And I love currants, but you can also use golden or brown raisins if you want.

Another thing I’ve noticed about my friends–no one is afraid to give another person a compliment or tell them how they feel about that person, or even give them a hug. We are a huggy group, that is for sure. Oh, and a hungry group!

Chicken Curry Cashew Currant Salad

Ingredients
 

  • 3 pounds cooked chicken, shredded or diced (or rotisserie)
  • 1/4 cup diced red onion
  • 3 ribs celery, diced
  • 1/2 cup carrots, shredded
  • 1/2 to 1 cup currants, or raisins
  • 1 cup chopped cashews
  • 1-1/2 cups mayonnaise
  • 3 Tbsp. curry powder, or to taste
  • 1 tsp. cumin
  • Dash turmeric
  • 1 cup cilantro, chopped
  • Lime juice
  • Salt and freshly ground pepper, to taste

Instructions
 

  • In a large mixing bowl, combine cooked chicken, red onion, celery, carrots, currants and cashews.
  • In a smaller bowl, whisk together mayonnaise, curry powder, cumin, turmeric and salt and pepper, combining until smooth. Add a few drops of lime juice.
  • Pour the mayonnaise mixture atop the chicken mixture and blend, working gently until chicken is fully coated. Refrigerate until use.
