Friends, when our guests came for the weekend recently, we had a full house. With just three bedrooms, plus our kids home, it was a little tight. But we were organized, and it was nice outside, so there was little time spent indoors.

I love it when kids come for a visit, as it reminds me of all the fun that we had with our kiddos. Parenting is not for wimps. It’s hard and takes a lot of sacrifice, but on the other hand, it’s full of so much FUN!

When I was preparing one of the meals, I handed a pair of scissors to the 2 girls … please make me a pretty centerpiece.

Pamela’s Baking Mix, gluten-free

Hosting also reminds me to make special meals for guests who are on special diets. I like to keep Pamela’s Baking Mix, which is gluten-free, on hand. Keep it stocked in the cupboard, so if there’s any question at all, you know you’ve got the “gluten-free” part covered.

We made Pamela’s waffles one morning, served with Marion Blackberry Jam (I like to buy this at Costco, 2 in a pack, and it’s half the calories of regurlar jam, plus it’s made in Oregon!), and 100% maple syrup. (This summer I visited the berry fields in Oregon – so fun!)

Oh, and we added a special touch to the waffles: Coconut, and a sprinkle of chocolate chips in each waffle.

What waffle baker do we use? We love, love, love our KitchenAid Waffle Baker, because it bakes 2 at a time. YAY!

Divine, hot, with melted butter (and chocolate chips), a great way to start off our morning, before our long bike ride and trip to the pool.

Hospitality with kids

Our kids have seen us entertain so much over the years, that it reminds me of what we taught our kids about hosting, years ago.

Inviting people over is a gift to our guests. It takes sacrifice and work (and sometimes money), but in the long run we’re rewarded with stronger connections, better friendships, and investment in other people’s lives. We don’t look for a reward–it just supernaturally happens.

Things don’t have to be perfect. Do your best to be ready, then let the guests help when they come.

Now our kids are adults, and I see little kids around our table, with parents teaching them about how to be a good guest, and other hospitality principles. It’s the circle of life, and I love it.

Hospitality never looks the same! There’s always room for new and lovely ways to reach out and love on people, with food and a cozy home.

Chocolate Chip Coconut Gluten-Free Waffles

Try making extra and freeze for later use. Wrap in foil or plastic to store in freezer; reheat in the toaster. Great for open faced sandwiches!

Ingredients
 

  • 2 large eggs, separated
  • 1 ½ cups Pamela’s Ultimate Baking and Pancake Mix
  • 2 ⁄3 cup water, or soda water
  • 1 Tbsp.  oil
  • Chocolate chips
  • Coconut flakes

Instructions
 

  • Whip egg whites until stiff.
  • In a separate bowl, combine Pamela’s Baking & Pancake Mix, egg yolks, water, and oil together, until there are no lumps.
  • Fold in stiff egg whites and bake immediately in preheated, greased waffle iron, sprinkling with chocolate chips and a tiny bit of coconut.
  • Serve waffles hot off the iron. Increase baking time for crispier waffles.
