But I also love to have healthy foods ready for friends, family, and out-of-town guests!

These Coconut Berry Breakfast Parfaits are a simple alternative to a healthy breakfast, where people can grab them and go … or even serve as a delicious summer dessert!

Oh, how I love this time of year. Long days, warm nights, the house is buzzing with excitement.

Even living in a small space, with all our adult kids home this summer, it’s been tight, but fun!

We’ve learned to adapt to staying on top of picking up our own stuff, doing the dishes, sharing the laundry room, and everyone helping out with meals.

We’ve learned you really do not need a huge house to be happy! We once lived in a 900 square foot home, when the babies were born. Now in their 20’s, we’ve downsized from our big family home, to a small 3 bedroom home, where at times we feel on top of each other.

But it’s working! We haven’t killed each other yet, and we’re realizing that the less we have, the happier we have become. It’s been a very special season for our family!

So for holiday weekends, make an easy breakfast casserole that you can pop into the oven, or for a lighter breakfast, enjoy these Coconut Berry Breakfast Parfaits.

Made with yogurt, coconut, almonds, and berries … so good.

I buy Noosa Yoghurt (yes, with an “h”) because it’s so smooth, with creamy coconut mixed in with real shredded coconut. Nothing quite like it.

We’re floating the river this week, hosting a few barbecues, will go to our local free concerts at the lodge, and of course go on walks, ride bikes, sit on the back deck and watch the sun set.

This week we are honored to celebrate our country’s independence, and are proud to be Americans!
