I always have a few cans of Rotel in the pantry. I use it in my guac and when I make chili. Your black bean dip looks wonderful and I will be making it soon...maybe this holiday weekend! Rotel adds a nice punch to tortilla chicken soup or Mexican veggie soup too! Love your sunflowers and have a wonderful long weekend.

I've never thought of using Rotel in guacamole before, but it makes perfect sense and sounds delicious.
I love Rotel and use it in cheese dips and casseroles and a soup or two.
Enjoy your site very much!

I add Rotel anytime a tomato dish needs an extra kick! I really like it in chili. I make a version of the black bean dip but we call it Cowboy Caviar:-)I'll have to check out Rotel's site for some more ideas.

Your dip looks great. I try to always keep a can of Rotel on hand, I usually use it in my favorite chicken/tortilla soup. My recipe doesn't come from their site but I'm going to visit it and see the recipes they have posted.

This looked so good that I just had to try it for dinner tonight. I only had time to let it marinate for about 3 hours but it was really good. The meat from the thigh is more tender (I think) than the breast. The coconut flavor was very mild-not overwhelming. Thanks for a new dish for the grill!
BTW Thanks for the shout out on your facebook page. I've gotten over 100 views! Emma

So glad you liked Kentucky! Louisville is just up the road from Lexington where I live. Did you try a Hot Brown while you were at the Brown Hotel? I went to Transylvania University with Chef Joe Castro. It's fun to see how he has risen in the food world.

Blessings,

Hmmmm...sounds good. can you taste the coconut flavor or is it pretty mild. We haven't done any outdoor entertaining yet. Well, I take that back. Mother's Day was beautiful and we had my inlaws up. At the last minute we decided to set up a table outside and enjoy our meal on the covered back porch. So nice and enjoyable

Hi Sandy- I stumbled upon your blog today while looking for books on Amazon. I purchased your book and immediately googled your blog! Your blog is lovely, and your entertaining advice is wonderful! I love to entertain and plan parties, and always feel like everything has to perfect. I have spent the past hour reading your summer entertaining series and I love it! I am going to lighten up and not stress so much about entertaining! You have a new fan, and I am looking forward to reading your book when it arrives! :-)
