Friends, for a quick lunch eaten with green salad (or a few chips), these salmon and dill sandwiches are a delight. Of course you can change up the bread (we also love French baguette). Our favorite Grilled Lemon Dill Salmon is perfect leftover for this sandwich recipe.

Ingredients for Leftover Lemon Dill Salmon Sandwiches

  • Sour cream
  • Greek yogurt
  • Salt
  • Fresh dill
  • Lemon
  • Garlic powder
  • White pepper
  • Leftover cooked salmon
  • Loaf of fresh, specialty bread
  • Avocado
  • Sprouts

Are you a sandwich lover like I am? I grew up in Medford, Oregon, eating sandwiches at Squeeze Inn Deli. They set the bar high, let me tell you. They made the best sandwiches. Never have I had a “salmon” sandwich there, though. It’s not typically something I would order off the menu either.

If you don’t have a specialty bread (like your favorite deli bread), you can use a French-style baguette. Most stores carry baguette, and it’s usually nice and soft and fresh! This leftover salmon is also delicious on sour doughbread. We have a new deli in town, and I love to grab a sandwich to go on their sourdough. So good.

Any kind of sandwich or filling is good as long as the bread is good with a crisp crust and aerated inside. Right?

How do you make salmon dill sandwiches?

  1. Combine Greek yogurt, salt, sour cream, dill, lemon juice, garlic powder, and pepper in large bowl and mix until smooth.
  2. Flake the leftover salmon with a fork. Add it into the Greek yogurt mixture and mix well.
  3. Toast bread in toaster or in a pan with butter. Layer salmon spread, avocado, and sprouts. Serve!

Make this recipe your own

Adapt this recipe by changing the fresh herb to one your favorites, for example chives. You can also season with spices and add pickles or zucchini relish. My sister canned zucchini relish this past year and gave me 3 jars!

Add avocado slices or fresh vegetables such as lettuce, tomato. Of course we love the microgreens!

  • 1 ripe avocado
