This cookie recipe will carry you into the end of the year, possibly as your new favorite easy snack!

Make the cookies ahead of time and refrigerate. The dough will be moist and soft!

I always love a no-bake cookie, because you can keep them stored in the fridge and bring them out just in time for serving!

You can also freeze these cookies and defrost and enjoy later!

Give up on perfection

Speaking of hosting. Unless you have it down (as in being organized, have a plan, and let go of having things perfect), it can be exhausting.

If you feel the need to create the perfect house and meal, then that puts a lot of pressure on yourself. And possibly your family!?!

Some people say forget it, it’s too much work and too much money, so they never invite people in.

But I have said for years here on RE, start small (invite a few people over, not 12), keep the menu easy, make up what you can ahead of time, and focus on the table and the people who are coming.

If you’re going to worry about any part of the house being “perfect,” which is a dumb thought, because the guests don’t even notice, then clean the bathroom! :)

Main Dish: Paprika Sweet Potato Chicken Thighs
Salad: Basic Green Salad
Bread: Ask your guests to bring a fresh loaf of bread!

No Bake Pumpkin Cookies

Total Time: 45 minutes
Yield: 12 -24 cookies depending on size

Ingredients
 

  • 3/4 cups sugar
  • 3 T. butter
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla
  • 2 tsp. pumpkin pie spice
  • 3/4 cup pumpkin
  • 4 cups quick uncooked oatmeal
  • 1 cup chocolate chips

Instructions
 

  • In a pot, mix the sugar, butter, and milk. Bring to a boil.
  • Remove from the stove and add the pumpkin, salt, vanilla, and spice.
  • Quickly add the oatmeal and mix. Add more or less for the consistency you want. Toss in the chocolate chips and lightly mix.
  • Drop with small scoop onto parchment paper, on a cookie sheet. (Dough will be moist.)
  • Cool the cookies in the refrigerator. Serve cold.
  • You can also freeze and pull out of the freezer right before serving!
