Slow Cooker Carolina Pork Sliders

Making the home cozy and warm for when your guests arrive is easy, especially in the fall with a candle burning in the kitchen or living space, snuggly blankets nearby if you want to curl up by a fire. And then there’s the smell of something good cooking–like the pulled pork slider recipe–simmering in the slow cooker that I’m sharing today!

I recently discovered a delicious sauce at Trader Joe’s and whipped up a 3-ingredient meal for my family.

    -Onions
    -Pork
    -Barbecue Sauce

Slow Cooker Carolina Pork Sliders

So easy, I added 2 sliced sweet onions at the bottom of the slow cooker. Then I added a 6 pound pork shoulder (bone in) on top of the onions, adding 2 bottles of Trader Joe’s Caroline Gold Barbecue Sauce.

I cooked it on low all day, because I wanted the meat to be so tender and fall off the bone. But here’s a secret that works really well: Cook the pork overnight and when you wake up, the meat will be ready. This is great if you’re making sliders for a luncheon or afternoon or early evening party.

The flavor was out of this world, and we served it shredded on pretzel rolls as sliders for an easy meal, along with a green salad.

I also love to have something simple to show my kids (as they are adults now), that cooking can be affordable and that you can also create larger batches to share with others.

Pulled Pork Sliders with Carolina Gold Barbecue Sauce

Easy slow cooker overnight pork recipe, perfect for feeding a large crowd.

Cook Time: 10 hours

Ingredients
 

  • 1 Boston butt or pork shoulder roast, 4-6 lbs, depending on the size of your slow cooker
  • 2 large onions, sliced
  • salt and pepper to taste
  • 2 bottles of your favorite barbeque sauce, I used Trader Joe’s Carolina Gold

Instructions
 

  • Place pork roast in the slow cooker on top of the sliced onions; add 2 jars of barbecue sauce.Cover and cook on low for about 9 to 11 hours, or until very tender.
  • Drain off fat, discard bones. Shred pork in the existing sauce. Continue cooking on high for about 1 hour.
  • Serve shredded pork on pretzel or potato rolls!
