We recently met some friends down by the river and everyone brought a dessert. One friend brought my Mixed Berry Crumble Recipe and ice cream (oh, yum!).

I brought this Classic Raspberry Crisp. Mm-m-m … it tastes like summer, and can be served with vanilla ice cream or fresh whhipped cream! Because it’s summer, you may also love a good Blackberry Almond Crumble or Blueberry Snickerdoodle Summer Cobbler!

We sat by the river with a few surrounding daisies (there were a few here and there), and we exchanged delicioius summer bites.

Classic Raspberry Crisp

This amazing summer Raspberry Crisp has a little flavor that I love. Cardamom. Cardamom is a spice made from the seed pods of various plants in the ginger family. So good mixed with fresh rasberries! We even added a few golden (or sunshine) berries on top!

You can make this recipe with frozen raspberries, but make sure and note the consistency will be a bit runnier. Still great flavor, but super runny (since everyone asks!). My preference? Fresh berries.

Topped with ice cream or fresh whipped cream! Yes, please!

Entertaining is more than …

Entertaining is more than inviting guests, setting a pretty table, and cooking up a great meal. It means practicing community, being spontaneous, and even meeting friends for a quick bite out (or in this case, on a blanket by the river). The river is about 4 minutes from our house, so it’s quick and easy.

Not everyone has a river though, and most of our hosting happens around our table, where we share stories, experiences, and find out more about what makes people so interesting.

People are hurting, our experiences make us real, and it’s a privilege to be a good friend and to listen.

I always want our time with people to be more important than the food that is served. I realize that not everyone feels this way, because we focus more on image than people.

A few weeks ago, we were with another family, as we found ourselves taking in an unusual situation …

Food can sometimes take a backseat when someone is hurting, and you get to talking, and then you forget about the food that’s in front of you. And that’s okay with me!

PS. There’s nothing better than fresh picked raspberries, still warm off the vine … ( our garden a few years back.)

Classic Raspberry Crisp Recipe

This makes an 8×8 pan, but double it up for a 9×13! If doubling and you don’t quite have 8 cups of raspberries, add blueberries for a filler. If you don’t like coconut, double the flour instead. Delicious!

Ingredients
 

  • 4 cups fresh raspberries, + 1 cup sunshine rasperries, which are golden in color
  • 1/3 cup coconut sugar + 2 Tbsp.
  • 1/3 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 1/4 cup shredded coconut
  • 1/8 cup brown sugar, we like to use dark brown
  • 1/2 tsp. cardamom
  • 1/2 tsp. salt
  • 2/3 cup cold butter, small cubes
  • 1 Tbsp. olive or avocado oil

Instructions
 

  • In an 8x8 baking pan, gently toss raspberries with 2 tablespoons of coconut sugar.
  • In another medium bowl, combine the flour, oats, coconut sugar, coconut, dark brown sugar, cardamom, and salt.
  • Add in the butter cubes and mix  togehter until the it resembles coarse crumbs. Add a tablespoon of olive or avocado oil to add moisture.
  • Lightly sprinkle the crumb mixture over the berries.
  • Bake at 350° for 30-35 minutes or until golden brown. Serve with your favorite premium vanilla ice cream or fresh whipped cream.
