Today’s post I’m setting a Q Squared Valentine’s Table with  Skinnytaste’s Slow Cooker Chicken Enchilada Soup + a Valentine’s Day Menu!

For Valentine’s Day this year (a week ahead or after), how about setting a pretty table and inviting your close friends over for an intimate dinner party? Last week we came together on a Thursday night for a lovely dinner party at my house, and I recently read a Proverb about friendships that made me smile.

This is how I feel when some of my best lady friends are gathered around the table with me.

With the help of Q Squared NYC and their beautiful peony pattern dishes, it only took me a few minutes to put a pretty table together. I usually get my inspiration from the season at hand, and then from the dishes and napkins I want to use.

From there, I find a charger that matches, along with the dinner plates.

I love mixing a signature pattern dish (Q Squared Peony appetizer plates, bowls, and salad plates) with a Dollar Store dinner plate. Chargers are from Michael’s.

Q Squared was founded by a mother-daughter team, Nancy and Alaina, and was created as an alternative to overpriced and under-designed dinnerware.

I love their beautiful, ornate designs on the highest quality melamine (yes, melamine!), that makes setting a classy table very affordable!

I wish I could have all my friends over for a dinner party, so they could see, feel, enjoy this plate collection. Can you tell how much I love it? Anything that goes easily into the dishwasher, and is lightweight, but looks like China, is alright by me! {100% highest quality melamine. BPA-free. Dishwasher safe (top and bottom rack). Heat resistant. Lightweight and durable. Not microwave safe.}

The wine tags were on Target’s holiday clearance aisle, 8 for $1, so I stocked up.

With a week of sunshine in the Rogue Valley, I bought $1.49 primroses and placed them in little galvanized buckets {from our local Craft Warehouse}. White IKEA candles, cute party striped pink napkins, this table said “girlfriend party” all over it.

This Slow Cooker Chicken Enchilada Soup was the bomb! I served a Mexican pizza, giant green salad (cilantro, tomatoes, red onion, carrots, avocado), and this soup – with all the toppings.

Dessert was this Gina’s amazing Bananas Foster al a Mode on Ice Cream.

Ten minutes to bake and then serve hot? Perfect easy dessert.

I’ve put together a very simple dinner party menu if you’d like to plan the same kind of party at your house!

How to prepare for the party:

Follow this simple schedule and you’ll be ready for your guests!

DAY BEFORE: Clean house, set the table, make the slow cooker soup.
MORNING OF PARTY: Make the dip, prepare toppings. Place back in fridge.
1 HOUR BEFORE: Set out the wine, make the salad, set out the toppings, chips, and dip. Prepare the dessert in 9×9 pan, cover with foil. Turn oven on to 400 degrees.
10 MIN BEFORE: Light the candles, turn on the music, pick up any “stuff” laying around.

Slow Cooker Chicken Enchilada Soup

Yield: 6

Prep Time: 15 minutes

Cook Time: 4-6 hours (slow cooker)

From The Skinnytaste Cookbook.

Ingredients:

  • 2 teaspoons olive oil
  • ½ cup chopped onion
  • 3 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 1 (8-ounce) can tomato sauce
  • 1 to 2 teaspoons chipotle chile in adobo sauce, chopped
  • ¼ cup chopped fresh cilantro
  • 1 (15-ounce) can low-sodium black beans, rinsed and drained
  • 1 (14.5-ounce) can petite diced tomatoes
  • 2 cups frozen corn kernels
  • 1 teaspoon ground cumin, plus more to taste
  • ½ teaspoon dried oregano
  • 1 pound boneless, skinless chicken breast
  • Toppings: ¾ cup shredded reduced-fat cheddar cheese
  • ¼ cup chopped scallions
  • ¼ cup chopped fresh cilantro
  • 1 medium (4-ounces) avocado (optional)
  • 6 tablespoons reduced-fat sour cream (optional)

Directions:

  1. In a medium nonstick sillet, heat the oil over medium heat. Add the onion and garlic and cook, stirring until soft, about 3 minutes. Add to the slow-cooker along with the broth, tomato sauce, chipotle in adobo, cilantro, beans, tomatoes, corn, cumin, and oregano. Add the chicken breasts. Cover and cook on low for 4 to 6 hours.
  2. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  3. To serve, ladle into serving bowls and dividing evenly. Top with cheddar cheese, scallions, cilantro, avocado, and sour cream (if using).

    My question is always , Where do you store all this stuff? You have so many different things for the table.

    • I have several storage places in my kitchen (3) plus cabinets in the garage. I’m also good at reusing and thinning through stuff, Karen! :)

  7. You wrote that the Chargers were from Michael’s. Are they a recent purchase? I could not find them online.

    • Guess what Carol? I went in yesterday to buy more and they scanned and said they are seasonal. Christmastime! Bummer! They do have cute denim ones in though!
