Friends, I’m so happy it’s sweet potato seeason. Here are a few of my favorite recipes on RE: Roasted Sweet Potatoes, Orange Ricotta Sweet Potato Toasts (really yummy), and Paprika Sweet Potato Chicken Thighs.

I’ve also been thinking a lot about grace, and how important it is to be gracious with those around the table. For us, we want people to open up, share their lives, and feel comfortable. We had some new friends over for dinner this past weekend, and what a delight it was.

When we’re sitting around the table, eating and enjoying one another, it just feels so right.

The grace-less way of living means not having room for people in our lives, which is one reason we love to entertain! We make effort to be gracious, to make time for others, and what better way than serving a good meal, and spending a few hours around the table!

Opening our home means that we extend ourselves, with our time, our budget (it can cost a little extra to cook for others!), listening, empathizing, and loving.

What warms my heart the most is when our kids are around the table, too. This short season, with 2 of them home, I know is a gift!

These Sweet Potato Turkey Burgers are outstanding! Get some fresh buns at Trader Joe’s (or big lettuce leaves for wraps), make a giant salad, and cut open a watermelon.

They’re made with sweet potatoes, onion, ground turkey, and couscous – YUM!

Don’t forget the avocado.

Sweet Potato Turkey Burgers

Sweet Potato Turkey Burgers

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Ingredients:

  • 1 sweet potato, peeled and finely cubed
  • 2 small chopped onions
  • 3 Tbsp. olive oil
  • 2 lbs. ground turkey
  • 2 Tbsp. crushed garlic
  • 3 tsp. paprika
  • 2 1/2 tsp. white pepper
  • 2 tsp. cumin
  • 3 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup cooked couscous
  • 1 cup chicken stock
  • 2 Tbsp. butter
  • Sliced red onion
  • Avocado, sliced
  • Tomato, sliced
  • Sharp cheddar cheese, sliced
  • Buns or lettuce for bun substitute

Directions:

  1. In large pan, heat 2 Tbsp. olive oil. Add sweet potato and onion and mix. Stir until fully cooked. Add fresh-cracked salt and pepper.
  2. Heat 1 Tbsp. olive oil, add garlic when hot and cook until golden brown. Add to sweet potato and onion.
  3. Bring butter and chicken stock to a boil. Add couscous and stir. Cover and allow to sit for 5-7 minutes.
  4. In large bowl, combine turkey, sweet potato, onion, garlic, couscous, and spices. Mix completely and divide into 2-3 inch thick patties.
  5. Broil in the oven for 15-20 minutes, flipping them over halfway through.
  6. Fancy them up with marionberry ketchup, avocado, and your favorite burger toppings.

  1. Looks awesome! I have to slide the sweet potatoes by some people so I’m thinking about grating them on the large holes of a box grater…Yum!

  4. Would like to add more protein….do you think quinoa could be substituted for the couscous?
