I made this with my daughter one day when we wanted to throw together quick and easy recipes. How was I to know we were about to reveal a new family favorite? the salad was quick and easy to make, but it is crazy delicious, too! My husband asked me to make it again tonight for dinner! it’s fresh and healthy, too. there is nothing to hate and everything to love in this dish. You should try it!

We had this tonight for dinner and my husband loved it so much that he asked if I can make it again on the weekend. It does require a bigger bowl than I own. Definitely going to add this to the summer rotation and great to bring to a BBQ.

In reply to Ellyn. You can use a mixer or a hand mixer or you can whisk the dressing. You can bring the salad dressing with you and add it right before serving. Toss and serve!

Hi Sandy,

I don’t have a blender. Can you suggest a substitute? I tried the recipe for the Asian Chicken Cranberry Salad. It was healthy and flavorful but the dressing made the salad very soggy. I don’t think I can bring this salad to a potluck.

Do you have to keep the dressing in the fridge or is room temp ok? Ps this salad is amazing!!
