Bacon & Honey Chipotle Bean Pinwheels Recipe

Ingredients
 

  • 2 large, 14-inch king size “restaurant” flour tortillas
  • 1 can BUSH’S Honey Chipotle Grillin’ Beans, drained (reserve 4 Tbsp. sauce)
  • 1 8 oz. brick cream cheese, softened
  • 12 slices fully cooked bacon, reheated, crumbled (or 2 cups bacon bits)
  • 3/4 cup green onions, thinly sliced
  • 3 cups Sharp white cheddar cheese, grated
  • 2 cups spinach leaves

Instructions
 

  • Preheat oven to BROIL.
  • To the softened cream cheese, mix in 4 Tbsp. reserved sauce from the drained beans.
  • On 2 large flour tortillas, evenly spread all the way to the edges 1/2 of the cream cheese mixture, topping with 1/2 of the beans, bacon, and green onion.
  • Sprinkle 1 1/2 cups of cheese on each tortilla. Broil on HI for 1 minute.
  • While warm, lay 1 cup of spinach leaves on each tortilla. Tightly roll the tortilla into a log (roll).
  • Refrigerate for at least 20 minutes (or up to 2 hours). Remove from fridge and slice off the edges. Slice each log into 12 slices (about 1-inch thick), and place on a plate. Serve!
