Friends, how lucky can we be today? It’s Tuesday, and also St. Patrick’s Day! I’m not sure where #TacoTuesday originated from, but our family usually enjoys tacos at least once a week, so today’s the appropriate day to share this simple recipe.

And St. Patrick’s Day? Being married to an Irish man, I’m sharing a few last-minute ideas for you to possibly prepare for your family or guests, a few “green” things that I’ve been enjoying, plus this fabulous #TacoTuesday recipe, delicious Bacon Shredded Pork Tacos!

And made an ice cold “adult” treat–Guinness Floats! You can always use Root Beer for the kids.

Bacon Shredded Pork Tacos

Ingredients
 

  • Cooked pulled pork
  • Cherry, or small heirloom tomatoes
  • Fresh cilantro, chopped, divided
  • Lettuce, chopped
  • Corn tortillas
  • Bacon slices
  • Mexican cheese
  • Sour cream + hot sauce, optional

Instructions
 

  • In the microwave, between 2 moist towels, heat the corn tortillas for about 1 minute. You can also heat the tortilla shells in the oven.
  • Cook bacon strips, either in microwave or on the stove.
  • Place cheese on the warm tortilla, along with prepared pulled pork, lettuce, cherry tomatoes (whole, or halves), and sprinkle with fresh cilantro.
  • Lay a bacon slice on top and serve with sour cream or favorite hot sauce, if desired.
