Carrie, I think I might try this with chicken liver! Without the maple syrup it will be very low-carb, and the other ingredients look delicious!

I make my meatloaf with 2 lbs 80/20 beef, 1 lb of spicy sausage, and 1 lb turkey meat. Worcester sauce. I add eggs, green peppers, onions and panko bread crumbs. I found if you mix the ingredients and when you make your load don’t make it so compact. Makes a more moist meatloaf.
