We had all of our neighbors who live in our cul-de-sac over for an appetizer dinner last week. I was nervous! Funny, so many of you have shared that you get nervous, too, when having new people over.

My nervousness stemmed from living in our neighborhood for almost 2 years, and not doing this sooner! Serving a charcuterie board is easy, and everyone seems to love it. It has a variety of foods on it, so you don’t have to worry about special diets. It’s inviting, pretty, tasty, and creates good conversation!

Not only did we have a wonderful time with these amazing people who live next door, but the note that came by snail mail after included words like these, happy words:

Thank you for inviting us for drinks and sumptuous and scrumptious appetizers – aka dinner!

So much to talk about from cutting boards to coyotes to our community …

We may be somewhat reluctant entertainers, but we will rally and have everyone over!

Making a Charcuterie with Baked Honeyed Cherries Brie Recipe:

  1. Grab a large board. Make sure it is “food safe,” or if not, cover with parchment paper.
  2. Layer your favorite cured meats, dipping sauces, crackers, bread, fruit, veggies, and dips.
  3. Make 1 recipe the “centerpiece.” For this board, it’s Baked Honeyed Cherries Brie Recipe.
  4. Bake right before you’re ready to present the charcuterie board. Serve hot and gooey!

Oh, and late into the evening … the board was pretty much devoured!

Baked Cherries Pecan Brie Recipe

Ingredients
 

  • 1 small, 8-12 ounce round of brie
  • 1 generous cup dried cherries, we buy at Costco, our favorite dried cherries
  • 1/8 cup honey
  • 1 cup pecans, toasted and coarsely chopped
  • Fresh rosemary
  • Thinly sliced baguette, for serving, or favorite crackers (we love Lesley Stowe Raincoast Crisps Cranberry and Hazelnut Crackers)

Instructions
 

  • Preheat the oven to 400 degrees. Place brie round on an ovenproof serving dish. I like to lay parchment paper down on a baking sheet.
  • Slice the top of the brie round off, cutting inward to make a bowl. Remove the “lid.”
  • Fill the bowl with the dried cherries and 1/2 cup pecans. Drizzle with 1/2 the honey (1/8 cup). Sprinkle with 1/2 the finely chopped fresh rosemary. Place the lid on top, pushing down. (It’s okay if a little bit falls to the side).
  • Bake for 10-12 minutes, or until the cheese inside the rind is melted and bubbly.
  • Drizzle with the rest of honey and sprinkle with fresh rosemary!
  • Serve hot with your favorite crackers or baguette bread slices.
