Friends, today is such as special day, because our baby girl is 19 years old! It’s also a hard day, because it’s the first time we’ll not be with her for her birthday, since she is away at college!

Abby’s at college!

A month ago, we got a text message while we were in HawaiiMom, I can’t fit everything in the car. Yup, it was a big job fitting all her stuff into our Volvo for her trip up to college. Fridge, clothes, guitar, violin, photography stuff, outdoor stuff, shoes … and shoes. Did I mention shoes? LOL. Her brother and a friend took her, because we already had our trip planned a year in advance, and it all worked out beautifully. She made it, she’s doing well, but we miss her today on her special day!

Nineteen years ago we brought our precious baby girl home from the hospital to her 2 brothers, her dad and me. I think about the ordinary days of scheduled routine in our home: breakfast, take the kids to school, helping out in the school, picking up after school, Balcony Girls (how cute is this post?) soccer for the kids, dinner on the table, music lessons, with a priority family discussion most nights, homework, shower, bed. And then we’d do it all over again.

Ordinary days.

I miss the ordinary days, the days when we still gave hugs, cooked dinner, picked up the kids, kissed the boo boos. I think we too often look for milestone things, exceptional things, extraordinary things to happen in a day, to give it meaning and a purpose. Sigh … the ordinary days were good days!

Happy Birthday, Abby!

Fast forward to today … Abby will open a care package that we sent to Seattle with a few of her favorite things, TODAY! I’m praying it arrives on time, but it’s a box full of delicious treats, a few birthday gifts, several cards, a few things she left at home that she needed. God bless the FLAT RATE boxes with USPS!

I can feel it now, a sweet little girl who lives only in my memory, walking through the front door.

And to a young woman who’s all grown up now, with a life of responsibility at college, out on her own.

We also enjoyed these banana pancakes the last morning we were all together in September, before the kids were scattered and we went on vacation.

That time, with chocolate chips, to celebrate the occasion! This time, I guess they are just as good as a college snack! OH, and the secret to making them the very BEST? Cooking them in hot coconut oil, so they nice and crispy!

Banana Chocolate Chip Pancake Recipe

Ingredients
 

  • 3 ripened bananas, mashed
  • 2 tsp. cinnamon
  • 1 tsp. baking soda and baking powder
  • 1 tsp. salt
  • 1 cup whole wheat flour
  • 1 cup almond milk
  • 2 tbsp. honey
  • 3 eggs
  • ¾ cup chocolate chips
  • Coconut oil

Instructions
 

  • Mix all ingredients together in a medium bowl.
  • In a large pan, heat coconut oil until very hot. Spoon the batter into the pan and cook the pancakes until light and crispy on the outside; serve!
