Whole Grain Waffles

If you love Eggo whole grain waffles, then you’re going to love this recipe. These waffles are made just like regular waffles, where you mix the batter and bake the waffles in a waffle iron. The key is to have a good waffle iron. We recently picked up a GreenPan Waffle Maker and it is truly the best one we’ve ever had. The settings allow you to adjust the waffles for desired crispiness. This recipe works great with the new waffle maker.

Ingredients for Graham Cracker Whole Grain Waffles

Have you thought about putting a little extra “crunch” in your waffles? Well, we have the best recipe here. Gather these ingredients:

  • Whole Grain Flour: we buy Bob’s Redmill
  • Baking powder + baking soda
  • Eggs
  • Olive oil
  • Butter: salted (regular)
  • Greek yogurt
  • Milk: this may vary due to kind of flour used and how you like your waffles. We like ours on the lighter side, so sometimes use more milk than others do.
  • Tonic water
  • Dried cranberries: we buy Trader Joe’s orange flavored cranberries
  • Orange: for zest
  • Toasted coconut flakes
  • Graham crackers: with cinnamon & sugar

How do you make crisp waffles?

  1. In a large bowl, mix together the wet ingredients (eggs, olive oil, butter, Greek yogurt, milk, and tonic water). Add in the dried ingredients and gently mix (flour, baking powder and baking soda, and mix well. Then add in the dried cranberries, orange zest, toasted coconut flakes, and crunched up graham crackers.
  2. Cooke for about 5 minutes, or longer (if you like them crisp).
  3. Make sure to spray the waffle maker between each waffle in order to keep that crispy texture and flavor.
  4. Serve with your favorite topping, jam, or syrup!

What’s the best Waffle Iron to buy?

If you make waffles for a lot of people, a waffle iron that makes 4 waffles at a time is best. Try this GreenPan Waffle Maker.

If there are just two of you in the house, I recommend the Cuisinart Waffle Maker. It’s smaller and easier to store. [We used the smaller one for these photos.]

Tips and substitutions:

How to freeze waffles: Freeze the leftover waffles, if they don’t all get eaten! Allow them to cool first, and then place them into a freezer zip baggie and store in the freezer for up to 3 months. Any longer than that, and they’ll begin to develop a not-so-great flavor. When you’re in a “waffle mood,” just place your frozen waffle in the toaster and toast until it’s all warmed up and nice and crisp.

Serve with butter and maple syrup or whipped cream and fruit. You can serve them savory topped with fried chicken, bacon and avocado. They can also be prepared ahead of time and frozen (use the toasted method). 

This batter also stores in the refrigerator for up to a week.

Optional to leave out the graham crackers (but do give this a try, you’ll be pleasantly surprised).

TIP: Get your waffle iron hot before adding the batter.
