In reply to Joani. Just remove from freezer about 30 minutes before serving. No, the texture does not change when you freeze them. They even taste better! :)

These cookies are fantastic! How would you thaw them after freezing? I’d like to make them ahead of time for a church bake sale because I have a lot of other baking to do. Does their texture change at all after freezing?

I have not used shortening in a few years. Could I substitute coconut oil or butter?
