I made this for dinner tonight, and the aroma in my house is so fresh. I followed the directions, except I added some fresh tomatoes, mushrooms, and yellow squash. My husband approved and my 9-month-old enjoyed some too. Thanks for sharing!

When I am in organized mode (not as often as I would like), I try to keep a pot of low calorie vegetable or miso soup on hand. A small bowl before dinner really keeps me from overindulging, and also MORE VEGETABLES in my diet.

This looks great! I love the idea of using quinoa instead of a pasta.

How long will the quinoa stay good in the fridge?

YUM! that looks awesome. Often times instead of putting noodles or dumplings in my chicken soup I will use quinoa. I seem to like it better in soups and casseroles rather than as a side...I think it's a texture thing...lol.

Several years ago I started eating off a salad plate for dinner. This helped me with portion control. I don't do this as much now, but I fee like I have a good grasp on my portions and self control (being okay leaving things on my plate, not going back for seconds or taking smaller amounts knowing if I'm actually still hungry I can go back for a bit more), and recognizing when I'm satisfied and stopping! I will buy a container of Hagen daaz ice cream and take 3-4 days to eat it...lol.

Now if I could get that exercise thing down
