Look around your every day. Listen to what’s happening in the community. Then make your plans and get out and live.

My husband and I took a hike to Tumulo Falls a few weeks ago. It was a gorgeous day, with a light dusting of snow.

Brussels Sprout Pear Bratwurst Sheet Pan Dinner

These easy ingredients make a delicious dinner: Brats, pears, sweet potatoes, and Brussels sprouts.

We sometimes use two pans to ensure that all of the ingredients are spread out and cooked thoroughly.

Brussels Sprout Pear Bratwurst Sheet Pan Dinner

Ingredients
 

  • 1.5 lbs. bratwurst, cut in halves
  • 1 medium red onion, sliced into rounds
  • 1/4 cup of olive oil
  • 10 oz. Brussels sprouts
  • 2 pears, cut cored and each half cut into thirds (leave peel on)
  • 1 large sweet potato, peeled and thinly sliced
  • 2 tsp. cinnamon
  • Honey to drizzle
  • Salt and pepper to taste

Instructions
 

  • Cut in half, peel and and remove base of Brussels sprouts. Slice pear into 1-2 inch thick slices. Set aside.
  • Peel and cut sweet potato into 1/4 inch thick half moons.
  • Preheat oven to 425 degrees.
  • On large, foil-lined sheet pan (we sometimes use two pans to ensure that all of the ingredients cooked thoroughly) spread ingredients with enough room to cook evenly. Drizzle about 1/4 cup of olive oil into ingredients. Toss until vegetables and sausage are evenly coated. Sprinkle with cinnamon, salt, pepper, and add a drizzle of honey on top. Using your hands, toss once more.
  • Place in oven and bake for 35 minutes, uncovered.
