This was delicious. Only change I made was to add 1 cup of brown rice. The soup is very flavorful without being too spicy. Definitely a keeper!

I have made this soup several times. It’s versatile, so if you don’t have green chili’s but you have a can of Rotel, substitute away. I use black beans or whatever I happen to have on hand. It turns out delicious every time.

Fresh herbs DEFINITELY add so much to soups, but I can’t pick a favorite. Each different soup deserves one or two different fresh herbs!! Lovely soup!

I love soups and this one sounds yummy! My family has been sick so on (I don’t even know what day…I think Friday…haha) I made Chicken soup, adding some quinoa to it. So good!!! Just finished it last night. I love using fresh herbs when possible. Parsley is probably my usual one, but cilantro would be second.
